the only store bought kraut I like is the FRANKS in the green can. here is an easy way to duplicate that

shred cabbage......I use one of them food proccesors.
stuff cabbage in qt jars.
add 1 heaping tsp of table salt.
pour boiling water in jar to cover cabbage.

wipe rims and put lids on. tighten then loosen a bit. the salt and cabbage will ferment. after about 3-4 weeks tighten lids tight. they will eventually seal.

I/ve had some that didn't seal so what I did after the 3-4 week period I hot bath them for 5 minutes and no issue with sealing.

you will need to cook/simmer for about an hour before its ready to eat. if you put the kraut in a crock pot and heat for longer then the hour your good to go!!!!!!
