Potentially the best thing to ever come out of my kitchen – at least the best burger I’ve ever made.

1 lb. ground venison from this year’s deer mixed with 1 lb chopped uncooked bacon – good and course.  That’s all I needed for the burger mix – The bacon adds plenty of salt, juice and flavor and compliments the venison wonderfully.

For the stuffing (approximately – you can adjust to your taste or add other things) I took one block of softened cream cheese, 1/2 to ¾ cup of shredded cheddar cheese, 1 TB of dried minced onion, 1 to 2 tsp of garlic powder, and salt/pepper – again, to taste (Essentially like you’re making a holiday cheeseball appetizer) Also, I sautéed some mushrooms and onions with butter in a small pan and set-aside.

I took the burger mix and made two patties with a cheap plastic patty maker that I got at the dollar store back in college.  I put about 1 to 2 TB of the filling on one patty and placed the other on top, making extra sure to pinch and seal the edges and make it one firm mega-patty.  Do NOT overlook the importance of this step or it will cease to be a Lucy, rather a leaky mess in your pan or grill.

I threw it in a hot cast iron pan and gave it a good char on each side.  Then I turned down the heat a bit and flipped it every few minutes so it didn’t burn until I reached an internal temp of 155 deg.  I then put one slice of pepper jack cheese on top, some onions and ‘shrooms and a second slice of pepper jack on top to lock it all down.  Finally, I placed it all on a butter-toasted bun and let it rest for about 5 min before cutting into it.

Seriously unbelievably flippin’ amazing! Anybody with a little extra venison in the freezer should give it a try.

you made one burger out of 1# venny and 1# bacon??  that's a burger!!!!!

Ha! no... there was enough mix for several patties, in fact I made a second Lucy and re-heated it at work today for lunch - ALMOST as good as it was fresh out of the pan!  I had enough meat left over for three normal patties after the four patties it took to make two Lucys.  I made the normal patties for Mrs. ThunderLund as she's no-fun and doesn't like all the accouterments of the mega-burger. :rotflmao:

the way you worded it made sound like one patty, but the pic wasn't telling me that!!!!   someone taught me when having mushrooms and cheese burgers place the mushrooms on the patty then the cheese.. they do not slide off then...

Dang right thunderlund!! Gotta love experimenting with a burger, mixing bacon and cheese with more cheese and all the fixings, ya just can't go wrong!! :happy1:

That's awesome Thunder!!!!  That's on hell of a burger for sure!!  Maybe I'll get some venison in Muzzy season.  good luck.

My 7 and 9 year old boys mowed through the other patties for supper tonight - they LOVED them. I saved the leftover cream cheese stuffing and smeared it on the patties before I put American cheese over it (Have to hide anything that makes it look like anything than a normal cheeseburger for them). It's another good way to do this if you're in a hurry or don't want 2-1/2 pounds of food  ;)
