My electric smoker crapped out on me Friday evening and I have a brisket and ribs to smoke for Thursday. My question is would I be able to cold smoke them with the amazen tube for a couple of hours and then cook them in the oven without worrying about them being in the danger zone temp and worry about bacteria. Any help would be appreciated, thanks.

i do that with ribs and pork butt for pullednpork all the time , i wuold use a roaster oven and set the temp and monitor the internal temp to get what u want. with brisket and 10 12 hours it takes to donit right, easier to monitor inside than outside in the cold. smokenis just added flavor and slow cooking anyway, so add the smoke then slow cook it.

Coffee, I wouldn't go over couple hrs TOTAL time at room tempish before slamming them in the pre-heated oven. I may not be a smoker expert, but I sure as heck know the FDA rules......and thats 2 hrs out at 40* and above max. Just want ya to be safe and not sorry. I left a rack of rubbed ribs sit out for awhile rubbed and ran well into the 3 -4 hr range. Then I put them on a low temp grill...and the next 3 days was sicker than a dog. Keepin' 'em cool would help....

With the tube in my big grill It'll run at 100°just from the heat from the tube.  Not sure what temps will this week there but I haven't had any problems up here in the cold. But I've also to ease my mind on the issue is I've placed a bucket of ice in the grill while cold smoking basically for a peace of mind. No getting your hands on a barrowed smoker?

You could always cheat.  Just douse it with liquid smoke and throw it in the oven or slow cooker.   A friend of ours doesn't have a smoker.  She will put a whole bottle of liquid smoke on a pork roast and put it in the slow cooker.  Sounds a little heavy to me but I do like the stuff.  I agree with Rebs safety points.

i waz basing my advise on the fa t that its cold out. at the same time with all the rub and spices what the need for smoke any way really.

Just be aware that your kitchen is going smell pretty smoky if you smoke them first and finish them in the house.

Thanks guys for the tips. The high on Wednesday is only going to be around 40 but I think I’ll still go with some ice just to be safe. Boar, I thought of the same thing that with the rub does it really need smoke but you know everything tastes better with some smoke. I was going to cold smoke it 4 hours but I think that would’ve kept me in the bathroom for the next couple of days :puke:. Momma is still in Arizona for a few more week so if the house smells like smoke for a few days  no one but the cat will be here to bitch at me. Again, thanks.

I put a couple of hours of smoke on some Polish this afternoon.  Now they are in the oven.  Much easier to finish off with the cool $30 probe thermometer.  My wife is down to earth so lets me get by with it now and then as long as I don't push it.  The house smells fantastic.  LOL  I wish I could bottle it.  I keep telling the wife how good she smells.  She laughs. I will be here servant to pay for this...
