this is a recipe from a long time internet friend. this guy know
about food preservation {sp]  gonna try to get him here too.
he is from pennsylvania.

JOE AMES VERY BASIC BBQ SAUCE
utilizing tomato paste
(Makes approx. 1 1/2 pints.)

Make a blend of below dry ingredients
? 1 1/2 tsp - Onion powder
? 1 1/2 tsp - Garlic powder
? 1 tsp - Mustard flour
? 1 tsp - Salt
? 3/4 tsp - Pepper (Or your choice, red, white, black or chili)
Set aside for later addition.


Mix below ingredients together in a suitable pot.
2 c. ? Sucrolose,Or Sugar, granulated, brown, etc. (Variable)
1 -6 oz. Can - Tomato paste
? 8 oz. - Vinegar (Or lemon, lime or orange juice, acid of your choice.) Variable
? 2 TBSP - Oil, Vegetable (Your choice, peanut, corn, olive, canola, etc.)
? 2 TBSP - Corn syrup (Or honey, molasses, etc. Your choice)
? Smoke flavor, add as desired -
? Blend in the above dry ingredients, mix until sauce is smooth.

Bring to a boil, reduce to a simmer and cook while stirring for 5 minutes.
May be used immediately or stored under refrigeration.

OPTIONS
This is a very versatile sauce, you can add, more or less sweetener.
Replace some of the vinegar with lemon or orange juice.
Add additional crushed tomatoes.
Replace white pepper with your choice of peppers, chili pepper, etc.

This sounds like a good guide to making a signature sauce. I have tyred to make BBQ sauce just from my imagination and... it has not turned out so well! Thanks for the post. I'll try it and let you know!
