1 lb (5-6 cups) of High glutin flour from your local bakery, 12% protien or more, usually called fancy clear hard or something like that

1Tb of active dry yeast, proofed in 110 degree water till bloomed

2 Tb olive oil

I added 1 Tb of gran Garlic

Mix half the flour and all the other ingredients til you get a real sticky, gluey, stringy mess with the Kitchen Aide mixer using the paddle and add the rest of the flour and use the dough hook til you get a nice springy ball of dough.

Total time 15-20 minutes or so.

Now the key is to let the dough rest in the fridge for 12 to 48 hours and you get a nice thin, chewy, hard crust that really stands up to some heavy toppings of your choice. It's a little work but well worth the trouble.

For a different twist on Potato salad I make it up as normal.  Then before I put it in the fridge, I sprinkle it with dill weed.  Stir it up, then sprinkle more on top and put it in the fridge 'til meal time. 

My folks also added a new twist to cole slaw.  They make up the cole slaw is normal.  Then chop up apples (peeled is prefered) into 1/4" size (approx.) cubes and add it to the slaw.  I know it's a hit with my family!

Ray's Rolls

1 cup Milk
1/4 cup Sugar
1/4 cup Butter
1/2 tablespoon Salt
3 cup(s) Flour
1 Egg
1 package Yeast

PREPARATION:
Mix butter and 1/2 cup milk - add sugar, salt, then heat this mixture slightly. Then stir in the yeast. You then need to let this mixture set for a few minutes until the yeast starts to activate. You can tell this when the yeast starts to bubble up, it takes about 10 minutes. Then put the rest of the milk in a separate container and beat the egg into this milk.

Then you pour the milk and yeast mixture into a large bowl. You can then start sifting in the flour. After about half of the flour has been worked in you need to add the milk and egg mixture. The remainder of the flour is then worked in.

Once this is all completed you need to cover it loosely with plastic wrap , and let it rise to about double the size. Next make round balls of the dough and put it on a cookie sheet. In order to roll the round balls you will need to put some flour on your hands or the dough will stick to your hands. Place the balls on a cookie sheet and let them about double again and then bake in a 350 degree oven for about 13 min. Or until golden brown.

ya might want to cut this one down a little!
OFFICIAL U.S. NAVY BAKED BEANS
Servings: 100 3/4 cup portions

1 1/2 gal Beans, white, dry
8 gal Water, cold

Soak and cook beans using standard procedures.

3 c. Onions, chopped
1 qt. Salt pork, diced, 1/4 inch cubes
3 qt Tomato puree
1 qt. Catsup
2 lb 5 oz Molasses
2 1/2 c. Sugar, brown, packed
2 TBSP Mustard, dry
5 TBSP Salt
1 c. Vinegar or sweet pickle juice

Combine all ingredients with cooked beans. Cover and simmer for one hour.
Pour equal amount of mixture into each 18X24 inch roasting pans.

1 lb. Bacon, thinly sliced

Cut bacon slices in half, place across to of beans in each pan.
Cover and bake at 350 F. for one hour.
Uncover and bake one hour longer, basting frequently. If necessary, add extra hot water while baking.

NOTE: Cooking time may vary with the variety of beans used.

VARIATIONS:
1. BOSTON BAKED BEANS - Follow recipe for Navy Baked Beans, omit catsup and tomato puree.
2. BAKED BEANS AND HAM - Substitute 4 lb of diced, smoked ham scraps for salt pork

another potatoe salad recipe, havent tried it but sounds
good.
 Loaded Red Potato Salad

• 2 pounds clean, scrubbed new red potatoes
• 4 eggs
• 12 slices of thick smoked bacon
• ¼ cup fresh chives
• 1/2 onion, finely chopped
• 1 ½ cup sour cream
• 1 cup Hellman’s or Dukes mayonnaise
• salt and pepper to taste
• 12oz shredded cheddar cheese.
• 2T dill relish if you like pickles

1. Bring a large pot of salted water to a boil. Add potatoes and cook until fork tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.
2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
3. Place bacon in a large, on a flat pan and put in the oven on 300 for 15-20 mins. I like them still alittle soft not over done.

4. Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, bacon. Add mayonnaise, salt and pepper to taste. Chill for an hour before serving. Then add the chives and some extra bacon to the top

The original recipe isn't mine, it's from Fiorella's Jack Stack:

2 Tablespoons butter or margarine
4 teaspoons flour
1/8 teaspoon garlic powder
3/4 cup milk
1 1/2 cups sharp American cheese, shredded
1 -3 ounce package of cream cheese
3 (10 ounce) packages of frozen, whole kernel corn, thawed
3 ounces diced ham
Melt butter; stir in flour and garlic powder.
Add milk; cook and stir over medium heat.
Heat until thick and bubbly; stir in cheeses. Cook/stir over low heat until cheeses melt; stir in corn and ham.
Bake in 2 qt casserole for 45 minutes at 350.

I'm pretty sure a lot of folks have made this a few times. I doctor it up quite a bit. Add some pepper jack or parmesean. Bacon crumbled on top is nice, or a top layer of cheese so people get the "cheese stretch" when they take a scoop. I've also made it with pulled pork. That was good, but it's a different taste than the ham, obviously. And it definitely needs more seasoning, imo. I usually use one of our bbq rubs to taste, but just salt, pepper, more garlic powder makes a difference.

Green Beans

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cans green beans drained
1 can cream of mushroom soup
1 medium Green pepper chopped very fine
3 tablespoons butter
2 5 oz jars Kraft old English cheese
1 1/2 cups French fried onions

Melt cheese in the cream of mushroom soup. Add chopped green pepper and butter. Heat until butter is melted. Place beans in a buttered pan. Pour soup mixture over beans, cover with french fried onion rings. Bake at 350 four about 40 minutes. This recipe is for a 9x13 pyrex pan.

getting bored i guess, so am doing this today.
HOMEMADE CINNAMON ROLLS   

1 pkg. dry yeast
1/3 c. sugar
1 egg
1 tsp. salt
2 c. milk
4 tbsp. butter
5-6 c. flour
1 stick butter
Sugar and cinnamon
1/2 c. pancake syrup
1/2 c. butter
1 c. water
1 c. brown sugar

Dissolve yeast in 1/2 cup warm water. Scald milk (bring to a boil, stirring constantly). Add 4 tablespoons butter to the milk. Remove and allow the milk to cool. (I sometimes stick the milk in the refrigerator for a short time to speedup the process.) Add the milk/butter mixture to the yeast mixture. Add about 5-6 cups flour. You don't want your dough to be sticky, so you add flour until it can be kneaded easily.

After kneading until smooth, roll into a ball. Let rise for about 2 hours. Roll out flat - about 1/2 inch thick. Soften stick of butter and spread evenly across the flattened dough. Sprinkle heavily with sugar and cinnamon.

Roll up the dough in a long tube-like manner. Cut 1 1/2 to 2-inch sections of the long tube. You should see the design of a cinnamon roll at this point. In a saucepan, mix the syrup, butter, water and brown sugar. Boil for about 3 minutes, stirring.

Pour this mixture into the pan that you are using to bake the rolls in. You may sprinkle nuts on top of the syrup mixture (optional). Then place the rolls on top. Bake for about 1/2 hour at 350 degrees.

When they are golden brown, remove from the oven. After about 5 minutes of cooling, flip the rolls over onto a cookie sheet. The "goop" will be on top of the rolls now. Enjoy!

Dr. Bob's BWCA Super Sandwich Spread.
 
During a recent BWCA fishing outing with the infamous Dr. Bob he took the time to share one of his north woods sandwich spread recipes. I've decided to pass it on to others so they to can enjoy Dr. Bob's BWCA Super Sandwich Spread.
 
Ingredients :
 
Two slices white bread
To much diced chicken
To much Mayonnaise
Seasoning of your choice
 
Equipment needed:
 
One rubber sandal with deep track thread
One Lund boat with beautiful forest green carpet
One fishing rod
 
 
Preparation procedure :
 
Make sure preparation area is well cluttered
Remove pre-made sandwich from cooler
Set fishing rod down on floor
Unwrap sandwich
When fish strikes promptly place unwrapped sandwich on right knee
Lunge for fishing rod swiftly while knocking sandwich to the carpeted floor in one motion
Stand up to set the hook while placing right foot on sandwich and slide foot forward
After the disappointment discovering that you missed the fish, refocus on the sandwich spread preparation
Remove the sandwich parts that have not been smooched from carpet and throw overboard to the gulls
Inspect the under sole of your sandal and admire your BWCA Sandwich Spread
 
Caution:
This should only be attempted by persons over 200 pounds!

Great recipe for using up leftover turkey:

The Legendary Hot Brown Recipe

Ingredients:
4 oz. Butter
Flour to make a Roux (about 6 tablespoons)
3 - 3 1/2 cups Milk
1 Beaten Egg
6 tablespoons Grated Parmesan Cheese
1 oz. Whipped Cream (optional)
Salt and Pepper to Taste
Slices of Roast Turkey
8-12 Slices of Toast (may be trimmed)
Extra Parmesan for Topping
8-12 Strips of Fried Bacon

Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and Parmesan cheese. Add egg to thicken sauce, but do not allow sauce to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste.

For each Hot Brown, place two slices of toast on a metal (or flameproof) dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan cheese. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross two pieces of bacon on top, and serve immediately.

this is a real close clone to kfc recipe, yep i stold
this one too!
8 cups very finely chopped cabbage
1/4 cup shredded carrot
1/3 cup granulated sugar
1/2 tsp. salt
1/8 tsp. pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1-1/2 tbsp. white vinegar
2-1/2 tbsp. lemon juice
Directions:
Be sure that the cabbage and carrots are chopped up into very fine pieces, about the size of rice kernels. Combine the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice and beat until smooth. Add the cabbage and carrots. Mix well. Cover and refrigerate for at least 2 hours before serving.

Grandma's (Mame pronounced May Mee)German Potato Pancake Recipe. I would love to share it with all of you.


3 potatoes
1 egg
salt and pepper to taste
1 tsp. flour
little water if necessary

Grate potatoes; add egg, salt, pepper and flour. I have never had to add water.
Cook like pancakes on medium high heat. Grease the skillet or grill well with margarine for good browning.
Serve with bbq pork and applesauce.

just making this today, thought i would share.

3 ripe bananas mashed
2 beaten eggs
2 tbls melted butter
2 cups flour
3/4 cup sugar
1tsp salt
1tsp baking soda
1/2 cup chopped walnuts  [optional]
mix well
put in greased bread pan
bake at 350 degrees  50-60 minutes

I've been on a diet lately... OK, I've been "supporting" Mrs. ThunderLund on a diet.  She's been finding the recipes and I've been helping her make them and offering my 2nd opinion on how they taste and if we should add them to the normal rotation.  We found a few good ones, this one so far is my favorite...  So easy, so good for you, and SO DELICIOUS! I'm a meat and potatoes guy - takes a lot for me to think of a salad as anything other than a nice side dish.  But I've been taking these to work for lunch lately.

Greek Mason Jar Salad
Serves: 4

Ingredients:
5 quart size wide mouth mason jars
10 tablespoons Greek vinaigrette (see below)
2 yellow peppers sliced (or use different colors)
2 cucumbers peeled and sliced
1 onion, sliced into rounds
1 quart cherry tomatoes
4 ounces feta cheese
5 cups chopped romaine lettuce

Easy Greek Vinaigrette
(will make enough for 4 mason jars)
3 tablespoons red wine vinegar
2 tablespoons lemon juice
5 tablespoons extra virgin olive oil
3 garlic cloves, minced
Good pinch of sea salt
freshly ground pepper, to taste
½ teaspoon dried basil
½ teaspoon dried oregano

Mix all dressing ingredients together in a small bowl and set-aside

Instructions:
Divide all ingredients into 4ths. Layer each mason jar with the ingredients beginning with dressing then adding peppers, cucumber, onions, tomatoes, Greek cheese, finishing with lettuce leaves. Keep them cool in your fridge. Just grab it    when you need it.
Give the salad a shake and arrange it on a plate.

Note: Pack the layers tightly without much air in between. That way your salad remains longer fresh.

How can one go wrong with spuds and cheese?  Everyone always likes this recipe I concocted, so here goes.

5 lbs. of potatoes, skin on, thinly sliced.
1 Can of Cream of Mushroom Soup.
1 Can of Cheddar Cheese Soup.
1 soup can full of milk
1 lbs. of the sharpest Cheddar you can get, cut into chunks or shread.
1 lbs. of the sharpest Swiss you can get, cut into chunks or shread.
1 Can of French Fried Onions
Salt
Pepper
Seasoned Salt
Garlic Powder
Grated Parmesian/Romano cheese.

In an appropriate sized roasting pan, put the potatoes.  In a large pan over low heat combine the two cans of soup, 1, can of milk, half the cheddar and swiss cheese, sprinkle liberally with parmesian/romano cheese, half the french fried onions salt, pepper, garlic powder and seasoned salt to taste.  Remember, potatoes can suck up a lot of salt.  You will all most have to do the first batch as an experiment to decide how much seasoning you need for your own tastes. Stir the ingredients till heated and the cheese melts.  Pour/spoon the mix over the potatoes, and then mix the potatoes and the sauce with a heavy spoon to get them all well coated.  Place the rest of the cheese on top of the potatoes.  Sprinkle liberally with more parmesian/romano mix.  Place the rest of the french fried onions on top.  Put in a preheated 350 degree oven with a lid on the pan.  Cook for an hour to hour and 15 minutes, removing the cover for the last 15 minutes to allow the topping to brown.  Let stand for a few minutes to set up before serving.  Feeds 6-8.  You can easily make a complete meal out of this by adding sliced kielbassa or ?????  Hope you enjoy this as much as we have.

  1/2 cup red or white onion fine dice
1/2 cup red sweet Red pepper fine dice
1 carrot fine shredded
2 tbsp fine shredded fresh ginger

3/4 tbsp butter

1/4 tbsp sesame oil
1 1/2 tbsp soy sauce
5-6 tbsp Teriyaki sauce

3-4 tbsp Hoisin sauce

2 tsp black pepper


 In a saute pan melt butter and add sesame oil,add onions, peppers,ginger,carrot.Cook till onion is translucent.Add Hoisin,teriyaki.soy and black pepper.If you like add red pepper flakes for heat.
