How can one go wrong with spuds and cheese?  Everyone always likes this recipe I concocted, so here goes.

5 lbs. of potatoes, skin on, thinly sliced.
1 Can of Cream of Mushroom Soup.
1 Can of Cheddar Cheese Soup.
1 soup can full of milk
1 lbs. of the sharpest Cheddar you can get, cut into chunks or shread.
1 lbs. of the sharpest Swiss you can get, cut into chunks or shread.
1 Can of French Fried Onions
Salt
Pepper
Seasoned Salt
Garlic Powder
Grated Parmesian/Romano cheese.

In an appropriate sized roasting pan, put the potatoes.  In a large pan over low heat combine the two cans of soup, 1, can of milk, half the cheddar and swiss cheese, sprinkle liberally with parmesian/romano cheese, half the french fried onions salt, pepper, garlic powder and seasoned salt to taste.  Remember, potatoes can suck up a lot of salt.  You will all most have to do the first batch as an experiment to decide how much seasoning you need for your own tastes. Stir the ingredients till heated and the cheese melts.  Pour/spoon the mix over the potatoes, and then mix the potatoes and the sauce with a heavy spoon to get them all well coated.  Place the rest of the cheese on top of the potatoes.  Sprinkle liberally with more parmesian/romano mix.  Place the rest of the french fried onions on top.  Put in a preheated 350 degree oven with a lid on the pan.  Cook for an hour to hour and 15 minutes, removing the cover for the last 15 minutes to allow the topping to brown.  Let stand for a few minutes to set up before serving.  Feeds 6-8.  You can easily make a complete meal out of this by adding sliced kielbassa or ?????  Hope you enjoy this as much as we have.

You might want to cook it in a disposable tin foil pan, or be prepared for aggressive cleaning of your roaster.  The stuff sticks to the sides of pan pretty good-you'll probably need to soak your pan before trying to scrub it.  Let me know how they come out.

Sounds great!  When I get a pan that wont scrub clean I just throw it in the yard until the next carwash... Hit it with the pressure washer and good to go!
