i love this doing this stuff, im getting it dow to a mere.handleing situation. i buy a 25 lb kit, the with a scale devide the seasoning and cure into 2 batches. lot easier to handle and you have a kit ready to go for next time.  this is 10 lbs lean bear and 5 lbs lean pork,  i toom 2 lbs of the grou d burger for the grill.tonight. i added 3 cups hi temp cheedar and  a half cup jalapeno,  cros my fingies. smells.good so far,.sittimg in the fridge  melding.
