a procces in my pulled.pork. i set my smoke at 250. sorrym previously ive injected my shoulders till thier seeping then i ad the rub. let sit for 2 days, smome at 250 till internal temp is about 170 give or take. af this point there is some drippings in the catch pan. i tke the shoulders and place them in a roaster. set again 250 spatula in the ddippings.add some water for about 1/2  in roaster. i roast till infernal.temps is about 200 and shut it down. i let it sit over night. next day i seperat the meat from bone. in chunks. no pulling yet. i take.juices and pour into a large.pyrex measuri g bowl. yu will see the fat rise to the top and the juices on the bottom , i then pour the contents into the fat separtor. then pour into anoth pyrex bowl. then i to the chunks of pork. then i add pork and juice into a crock pot and slow cook till chunks pull apart with fork. i have before done another fat seperation, but its not needed. the juice absorbe back into the now.pulled.pork. and i garuntee u. it will be the best pulled pork ever. i will dose this for.campapalooza. the picture illistrate the process of the fat seperator.

the juices pour back into the bowl and the fat stays int the fat seperator

Nice job! Never did it that way....makes sense to me!!!  Could you skip the first step and pour it right into the fat separator?  :scratch:

yeah reb ya could. i gusse i did it that way till infound the fat seperator. but also one might have more juices that the fat seperator can hol so i just pojred into a container first. plus if u fill up the fat sep. to full when pouring fat can pour out over the top at the same time juices are poureing thru the tube.

I either use a turkey baster or a ziplock bag to separate the fat from the broth
