Got lucky friday and picked up a deer.  We take the front shoulder and cold smoke it then bake for 3 or 4 hours at 275.  It falls off the bone tastes so good.

No brine.  Shoulders were on smoker 30 minutes after deer died.  Cold smoked overnight.  We then bake for 3 to 4 hours wrapped in foil.   Then finish in a pan of wild rice. Falls of the bone
