Let all get together and share our tips and secrets to a good bbq. in the next few days i will be trying to post some basic dry rubs  and direction  for anyone that may like to smoke  or bbq.  Lets all thank the management team for making this happen.

I'm actually tired of smoking and hope I can quit!  It costs too much!  ;D  Oh ....you mean smoking meats!  (I'm a lil slow sometimes!)   :laugh:

I actually am a noob (newbie/new person) at smoking.  I smoked a turkey, 8-10# (guessing) pork loins, and brats (real ones-not Johnsonville, although I do like those too!). 

I have an apple tree that is getting old, and can't wait for it to die.  2 reasons- one it's less apples I have to pick up from the ground before mowing each time.  And I'll have a nice supply of Apple wood to smoke with (once it's dried & cut). 

I prefer to smoke with applewood on most things.  I've even made those cheap "fun dogs"/hot dogs taste like something good by using a "cheater" when grilling. 

What I do is take a tuna can, burn it out removing a thin layer of "stuff" from the inside of the can.  Then I wipe it out making sure it's all clean. 

Once I get the grill good and hot and the coals ready for food, I put some apple wood chips in it. (I buy them at Flee Farm).  Many people soak their woodhchips in water, but I don't.  I place the cheater can in the center of the grate.  I then put my food, whether it be hot dogs, brats, hamburgers, pork, or chicken around it.  I put the cover on and wait.  I use a Weber kettle, so I close the vents almost all the way-yet still allowing fresh air in so it doesn't kill the "fire". 

When the food is done......MMMMMMMMMmmmmmmmmmmmmmmmmm good eats babyyyyy!  ;D  I've had many people compliment me and ask me how I get that flavor in my grilled food.  So I thought I'd pass this along to you. 

You can use this same method on a gas grill as well.  I've done it many times, but switched to charcoal because I absolutely LOVE the flavor it gives!

thanx woody sounds awsome.  fyi  you do not need to wait for the wood to dry out. i use nothing but green wood  and love the flavor .  keep on smoking

please post any reesults.  i needto know if its just my taste buds  or if everyoneelse enjoys the same taste .  ps pleasedont be afraid to let me know if its to sweet  to hot  to spicy and so on .  i can custom blend just about anything you can imagine .  just remeber ........  smoke on  and enjoy       scott :bandana:
