Here is one i perfectedout of a cookbook.  i changed a few things  and it is awsome. this will work with any large sized filet of fish .


          1/2 CUP KOSHER SALT
          1/2 CUP DARK BROWN SUGAR
          1/2 CUP OF WHITE SUGAR
          3 TABLESPOONS OF FRESHLY GROUND BLACK PEPPER   
          2 TABLESPOONS OF NUTMEG
          1 TABLESPOON OFWHITE PEPPEP
          1 TABLESPOON OF CAYENNE PEPPER


         1 SALMON FILET 3 TO  5 POUNDS  WITH SKIN ON


      In  a bowl combine all the ingredients. Rub generously  over the salmon. cover tightly in plastic wrap and put in the fridge for24 hours. Remove from fridge after 24 hours and rinse well . pat dry with a paper towel . bring your smoker to 150 degrees andsmoke for 5 hours.

Could this also be done over indirect heat on the grill??

yes  but  not to hot !!  make a smaller fire  and cook it longer  than regular indirect methods .  good luck  and let me know .  p.s   make sure you add wetchips every 15 minutes  .  this willl help .
