We had some walleye fillets from Red which we needed to cook up tonight... my wife is sick to death of the same ol' pan fried fish meal that we've eaten for years, so the last year or so, I've tried to mix it up for her... plus I just had a fried fish dinner at Westwinds on Thursday, so I wanted a change. When I was making up walleye tacos last weekend, I started to put this concoction together in my head... I hoped it would work out. The fish in the sandwich was fried, though combined with the other flavors it worked out great.

Sauce/Topping:

I made this ahead of time...

- Fry up a strip and a half of bacon (the other half was for doctored up baked beans) till crispy. drain on paper towel.

- Slice some green cabbage real thin. About a half of a cereal bowl or so. This adds more flavor and texture than regular lettuce... though that may work as well.

- Mimce some onion real fine... 1 tblsp. or so..

In the bowl with the cabbage, crumble the bacon and add the onion. Mix with just enough SPICY Ranch dressing to coat the cabbage. Set in fridge.

Bread:

I used sesame hoagies.

- Butter both halves and sprinkle conservatively with garlic powder and a little cracked black pepper. You don't need to add much seasoning as the fillets are seasoned. Coat with shredded parmesan cheese and lightly brown cheese side down in a pan till cheese is golden and crispy. Set on serving plate(s).

Fish:

- dredge fillet in seasoned flour till fully coated, this is needed to hold batter on fish

- dip in beer batter. I used Jack Storms breading, but any season flour breading should work well. Summit Pale ALe was the beer of choice today. Make sure the batter is pretty runny. Let excess run off fillet after dipping.

- immediatley roll in Panko rice crumbs after beer batter. This gives the fish an extra crispy texture.

- put in hot oil and cook till each side is golden. Drain cooked fillets in a collander.

Once the fillets are cooked, put back in the pan (no oil) on very low heat and to the top of the fillet add some shredded sharp cheddar cheese. I wanted swiss but we were out...  let them sit in pan for a couple of minutes till cheese begins to melt.

spoon a small amount of the cabbage mix onto the bottom of the hoagie and spread out, place fillet on top of the cabbage and another small dollop of cabbage on top of fillet. Cover with the top and slice in half.

Doctored up beans:

these are quick and easy.

about an hour before dinner slice up a half (or whole if you like) strip of bacon into tiny pieces. Mince up a tblsp. of onion real fine. fry the bacon and onion together over med. low heat till the onion is clear. Add a can of baked beans. Add a couple of tblsp. of brown sugar, a tsp of yellow mustard, a couple of tsp of wort. sauce, and a tsp of smoked chipolte tabasco sauce. Mix all ingredients well and simmer on low heat for an hour.

Make up a small side salad and you have a great dinner!

labs sounds sooo good have you tried india pale ale from summit not enough os in smooth the describe it. i will try this out ::cheers::
