Alright....with all of this knowledge here, I have a question. My son and I love to shoot honkers (early season)
I have made jerkey, summer sausage and slow cooked them in the pressure cooker (smothered in BBQ sauce)
Is there any other recipes out there?

it's a million dollar questions but I too would like this answered.

I'm thinking the Korean BBQ style marinade would be good on thin cut goose:
 
1/3 cup brown sugar
1/2 cup soy sauce
minced garlic
fresh ginger

need to adjust the amount dependent on amount of meat.  I may have to check some buddies bottoms of freezers and give this a whirl.

I used to do a lot of goose hunting, Canadas.  We got so tired of how to eat all of them every year.  We always asked the landowner if they wanted some geese.   One farmer always took a few.  One year we asked him if he wanted some geese.  He hesitated and looked at his cattle and said " I have all of this beef I am tired of those damn geese.  Have fun but don't leave any here this year."  lol

A friend of ours went to meat cutting school and they said if you have any tough meat soak it in Italian Dressing for a few days.  We left 4 boneless breasts in a ziplock bag with Italian Dressing in the frig for a week.  It really helped.  They were more tender and of course had more flavor from the dressing.  Of course we ate them on a hunting trip and some cocktails were consumed before we ate.  Might even be better if a guy sliced then up and then did the marinate thing.

I had some that were made into hot dog sized jalapeno and cheese sticks.  They were awesome.  Couldn't even tell it was goose. Pre-cooked/smomed and you could just eat them cold from the cooler.  Best goose I ever had..

If I go goose hunting this year I am going to grind them up and mix with 80/20 burger or some garlic pork and just use it as a filler.  Maybe use it in Armadillo eggs or something like that.

We even deep fried them (which was pretty good) if they were young birds. If they were older adults, they were like shoe leather.

ha, i was ccoming back with that idea to lps,.marinade, grind the up rol them fflat and ffill.a jalapeno ffilled.creamcchesee and sausage., roll that up with the ground goose..and sleper.on the grill

Slice the breast, sear in hot pan, put in low oven, like 275 until just done.  Overcooking is bad. 

Was listening to a podcast from Cooks Illustrated and a guy called in to ask about cooking wild goose.  Said it was tough and tasted like liver.

 Anyone ever tried them grilled and cooked to rare or medium rare??
Burnt on the outside and raw inside.My buddies in Texas an Lousiana did em that way and they were pretty good.Course that was in huntin camp.Tired an thirsty!!
 I have some???1 or 2 sausage recipes that are great,Pork fat is included for moisture. Someone mentioned a 80/20 mixture. To lean for no fat mussel drop it to a 60 goose an 40 pork fat no pork meat just fat,That 60/40 mix and add spices to yer liking grind stuff an you can make some good sausage. My dad made it from duxks when I was young.There were very few lessor or greater canadas around then or brandt!

No ones had a Christmas goose?! Cripes!!! That's heaven! I HAVE come close to having my goose cooked, though. We were laying there when she said....uh, er, never mind.  ;)

The marinades you spoke of are good but the meat must be served Rare to med. rare and it is surprisingly excellent. Anything done med. well to well is garbage.
