Venison sticks with heat

I found some time this week to make another batch of sticks. Guys at work wanted more heat, the wife wanted less smoke.  This batch was 3lbs veni, 2lbs pork. Serrano peppers this time along with a few grinds of trader joes smoked ghost chilies should give some heat. Hi-temp cheddar cheese was also added. Thanks rh for the awesome website and all you other guys who helped me along. I tried posting pics but I can't figure that out.

What happened when you tried to post pictures? Most times they have to be resized. Or you can just use the tinypic function right above the text window. Otherwise click attachments under the text window, choose browse, then look for your picture file.

yup i might be ffinishing offff a summer sausage batch into sticcks and anding red peppers.marinaded in sweet and sour saucce.. let us know.how it gose

Finally got it figured out..Some sticks had to go into the oven because of the rain and time restraints. Cherry pellets today.

Livin The Dream,  I can smell that great smoke from the sticks from here, although I sure wish I was up there with you to chomp on some of those.  Great job on those sticks.  I like heat myself!!!  good luck.

After 55lbs of sticks this spring, I learned something again today. I may use my smoker for cold smoking and then transfer to my oven. The sticks that came out of the oven were better than out of smoker.
