Ok, I got her done today.  Very good according to my wife and her mom.  I thought so also.  I'll post the recipe later.  Going fishing tomorrow.  My wife and her mom are going to have this tomorrow also.  Made plenty as usual..  good luck.

I had my mouse on smiting RH and stopped and thought about it.  It was all going to be in fun but I'm going fishing today for the weekend too and I didn't want to tempt fate.  He remained un smited by me although tempting.

Here is the recipe:

Korean Tacos  or Slow Cooker Korean Beef

3 lbs. chuck roast
1/2 cup brown sugar
1/3 cup soy sauce
1/2 chopped onion
10 cloves garlic, chopped
2 T grated ginger [ I buy the grated ginger in the jar]
2 T rice wine vinegar
1 T sesame oil
1 tsp red pepper

Lime Cream:

1 cup sour cream
zest of one lime
juice from one lime
salt to taste

To serve with:

Kimchi
lime wedges
siracha
sesame seeds
corn tortillas  [Next time I'm putting this on buns like pulled pork]
cilantro

Add the beef, brown sugar, soy sauce, onion, garlic ginger vinegar, sesame oil, and red pepper flakes to the slow cooker.  Cover and cook on low for 8 to 10 hours.  I wait till the roast falls apart.  Use a fork to shred the beef and crush the garlic cloves to "meld"in since they are tender.    Mix  everything well.

Mix together the sour cream, lime zest, lime juice, and salt in a small bowl.  Heat the tortillas, top with beef, lime cream, and if you like, top with kimchi, sriracha, cilantro, and sesame seeds.  I think you could do this with a good bun also instead of the tortillas.  I think it would be easier and better and then call it Korean pulled pork LOL.  good luck.

I'm going to make this with pork country ribs. They are on sale this week and less than half the cost of beef. Should be just as good.

Have to go to your site and make my own Kimchee first. So I can control the heat.
