One of the chicky quarters I bought. Good sized ones; took up half the plate. Ham 'n pea mac salad (I know, I know, but I couldn't think of anything else to make) and the usual assortment of veggies.... :tongue:

I do too. So easy to make. Cup of cooked elbows, some chopped onion, dill weed, ham chunks, frozen peas, and Miracle whip. Just toss together.

Just saw a food channel show this morning.  They said chili was actually a combo of things but originally started in Texas and did not have beans in it.  As it became more of a popular combination of tomatoes, beef, onions, etc people came to really like it.  It wasn't until later when times got tough that beans were incorporated since they were cheap and the flavors of chili covered up the beans.

The beans started when folks from Mexico added dried pintos to it, as they didn't have the meat like some folks did. Mexicans were often the cooks on cattle drives across the southwest. That's the only bean that goes in my chili....pintos. I used to have to sort, clean, pick over, and wash 100 lb bags of pintos  from Mexico every Friday after school at my uncles Mexican restaurant. Then I got to work over a huge vat of hot oil frying up 500 taco shells for the weekend. Everything made from scratch. Lotsa fun!  :rolleyes:   :doah:  But, I sure learned how to make real chili and Mexican food!!   :happy1:

I bet you can make some great chili or other Mex food Rebs.  How about tacos or burritos?  I remember I went to a Vo Tech school in Wilmington CA.  There was a place called Lucy's there.  It was a small house turned into a food stand.  Had a picnic table or two outside.  Nice painted house.  We ordered at the window.  A pork burrito was chunks of pork.  A beef burrito was chunks of beef, and a chicken burrito was chunks of chicken.  They all had the gravy of the meat in them with nice veggies.  They were awesome.  They were also big.  They said do you want green sauce or red sauce.  Well being a dumbass from MN only eating Taco Bell or Taco Johns I didn't know squat so thought red is the hottest so give me green.....   Man green was hotter and what a shock to a nerd from MN.  I have always thought I should try to duplicate them...   Easier said than done.

Never without tortillas and taco shells, Barry! I actually just ate a green chicken chile verde burrito, covered in green chile verde sauce and red sauce. That's known as doing it "Christmas"....really!  Love cookin' this stuff  up! *urp*  :tongue:

"Red or green?" is the official state question of New Mexico. Really,
it is. The "state question" was proposed in 1996 and finally signed by
the governor in 1999.

New Mexico is a major chile-producing state, and there are both red
chile sauces and green chile sauces. The "red or green?" question is
asked often in restaurants, and the state legislature thought that
making it an "official state question" would boost tourism.

Christmas is known for its red and green colors. In New Mexico

FLOUR TORTILLAS are what ya make burro toes (burritos) and chilitos out of.  They are made out of flour (usually wheat) and water. CORN TORTILLAS are made out of ground corn meal, then deep fried in oil, turning them into crispy shells, for tacos, chips, etc. Enchiladas are made from the CORN TORTILLAS and they are not fried in oil...they are left soft, and the filling is rolled up in them then covered with sauce, and baked.  :smiley:

Any place in town (Rochester) that sells fresh corn masa?   Thinking that pulled pork tamales would be pretty good.
