I used to have to sit at the table and eat my little dish of stewed tomato's out of the can before I could leave the table. Sat there many nights long after everyone left until I finally ate them. Stoopid dog wouldn't touch 'em. That's child abuse!  :mad1:

                        Chicken apple-cheese Casserole


INGREDIENTS

5 tablespoons butter or margarine, softened
3 medium-size apples, halved, cored, and sliced ( about3 cups)
2 large onions, thinly sliced (2 cups)
3 whole chicken breasts, boned, skinned, and split in half or quarters, and I flatten/roll 'em a bit
1/2  teaspoon seasoned salt
1/4 teaspoon pepper
1/2 cup shredded Swiss cheese
1/2 cup grated Parmesan cheese
1/4 cup dry bread crumbs (smushed croutons work too)
1/8 teaspoon dried thyme
1/8 dried rosemary
3 tablespoons fresh apple cider

Preheat the oven to 350 degrees F. Coat a 2-quart baking dish with 1 tablespoon of the butter.
Melt the remaining 4 tablespoons butter in a large pan over medium heat. Add the apples and onions and saute until the apples are tender, about 10 minutes. Spoon into the baking dish.
Rub the chicken with the salt and pepper and arrange over the apple-onion mixture. Combine the cheeses with the bread crumbs and thyme and sprinkle the mixture over the chicken. Drizzle the apple cider over the cheese. Bake for 35 minutes or until the cheese is golden brown and the chicken is done.

YIELD:
About 6 normal servings

This is about 20 years old....


    Reb's Beef Barley Soup

About 4 cups water
One 32 oz carton beef stock
2-3 Tbsp worchestire sauce
3 large ribs celery, diced
3 large carrots, sliced thin
1 large onion, diced
2 lbs round teak, trimmed and cubed, or trimmed stew meat
1/2 cup instant barley
3 tsps beef boullion
3 tsps dried onion
1 tsp garlic powder
2 tsp basil
1/4 tsp rosemary
1/2 tsp cracked black pepper
4-5 new potatoes, skinned and quartered


Brown beef over low heat in worcestershire sauce until light pink, add water, barley, beef stock, veggies, and spices, mix well. Cover and simmer on low for 30 mns or so. Serve with crusty french bread sprinkled with parmesan.  Freezes well.

Beef roast, baby kay-roes, onyums, and new red tater's with rosemary, drenched in beef stock in the crack pot. I also rubbed the roast with a bit of liquid smoke...:tongue:

Pressure cooker whole chicken, mixed vegies, mashed taters, dressing and gravy, sorry no pics.6 pound chicken, 38 minutes and fall off the bone, it was hard to carve being so tender.
if you kick me when I'm down you better pray I don't get up.
