Babysitting a pork shoulder today. Rubbed it up with mustard and some rub last night.  Looking to get a high temperature for shredding later on, the grill is at 210 right now with some good smoke but I'll probably end up pulling the gas smoker out and finish it in there.  :happy1:

Thanks gents. Just moved it over to the smoker, sitting at 139 internal temp. Been spraying it with a mix of apple juice and veggie oil. At 170 I think I'll foil it and put it back on for the duration. Mammas Makin some slaw and probably have some Cap'n Ken's beans.. burp-402.gif fart-421.gif.

Go get em thunderlund!!! Man I've been up in smoke lately , stinking up the neighborhood nicely.  Got me some of rebs secret rib rub for this afternoon.  Think this week will be lots of salads and fasting perhaps..

When you guy's smoke in the winter, does it effect your internal temp in your smoker?

I bought that new electric smoker, and have been leery on using it yet. I have some stuff waiting to be smoked, just wasn't sure if I should hold off or not.

I don't notice it in the old gas smoker but I do when I smoke on the big gril, sure burn through the charcoal. I take advantage of the cooler Temps for long cold smokes, I don't feel safe when it's warm.

Question: I notice when I use the charcoal grill in winter, it doesn't want to seem to "take off" after I pour the starter fluid on it. I keep the fluid outside in a bucket, could it be because it's so cold? Used about half a bottle the other week...$#@!

It's been probably 15 years since I've used starting fluid.I Use the chimney most of the time but if want more coals I'll use the electric probe. But ya the cooler Temps seem to put the coals out on one side of the weber, so I usually will light the torch and give em some air and they will come back around.

I only use the old weber in the winter...popor guy is on it's last legs, literally. think it's 21 years old. That new Weber Spirit is so good I can hold the temp right at 225* with no prob, and use a tin of wood chips for smoke. But, that ones sitting in the nice warm garage. :smiley:

Got the bottom vents wide open? I use the weber winters and control the heat an air flow from the top vent an even set the lid with a crack open while the bottom vents are wide open. Works fer me.

Yup, I leave them all wide open in winter. I'v e got some slab pig steaks gonna get smoked on Tuesday, so I'll bring the starter fluid in and let it warm up first. We'll see if that helps. I'm thinking also that since charcoal is a natural moisture absorber, letting it sit outside on the deck in a loosely covered bucket in the cold and snow might be part of it....the moisture won't evap out of it like in Summer.  :scratch:

pour the starter fliud on the charcoal............let sit for 5-10 minutes...........add some more fluid and lite!!!!! works like a charm everytime!!!!

You could tap into the side of any grill or smoker with that, turn it on low and blow smoke in hot or cold grills. I hope he seasoned all that tin and piping before throws smoke at food.
