I got so many flipp'in pickles....

I'm gonna try this for something different!

Refrigerator Bread and Butter Pickles

Yield:
About 4 cups of pickles

Prep:
3 hours

Cook:
5 minutes

Total:
3 hours

A wonderful, simple recipe for homemade refrigerator Bread and Butter Pickles. No canning equipment required! Just prepare and pop in the fridge!
Ingredients:

5½ cups (about 1½ pounds) thinly sliced (about ¼-inch) pickling cucumbers
1½ tablespoons kosher salt
1 cup thinly sliced sweet onion
1 cup (198 grams) granulated sugar
1 cup (240 ml) white vinegar
½ cup (120 ml) apple cider vinegar
¼ cup (50 grams) light brown sugar
1½ teaspoons mustard seeds
½ teaspoon celery seeds
1/8 teaspoon ground turmeric
Directions:

1. Combine cucumbers and salt in a large, shallow bowl; cover and chill 1½ hours. Move cucumbers into a colander and rinse thoroughly under cold water. Drain well, and return cucumbers to bowl. Add onion to the bowl and toss with the cucumbers.

2. Combine the granulated sugar, white vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds and ground turmeric in a medium saucepan; bring to a simmer over medium heat, stirring until the sugar dissolves. Pour the hot vinegar mixture over cucumber mixture; let stand at room temperature 1 hour. Cover and refrigerate 24 hours. Store in an airtight container in refrigerator up to 1 month.

i got a reciepe real similar HD!!!! pretty sweet.  doesnt have as many additions but basic principle.

hey if you got that many...........got any 2 gal or even 1 gal jars.

slice them cukes the long way after washing them. add to the jar sliced onion,  dill and garlic.....basiclly to your liking.

the brine is 2 qts water 2 cups vinegar......i add a bit more and a 1/2 cup picklin salt. mix and pour into jar. no heating and put in the frig.

think bloody mary pickle. i absoultely love these pickles!!!!!!!

glenns gonna work on prepping to make salsa tomorrow!!!!!!!

Looks awsome Hd!! I can't seem to get 2 jars tasting the  same,  ones good while the next is to dilly or to much garlic. First year at it so I'll keep going..

15 pints of salsa and 3 qts of tomato juice. Tomorrow a few qts of tomato. Hoping I have enough for 10 tomorrow.
Got a ways to go.
Last year we went through 25 pints of salsa, 20 qts of juice and around 30 qts of tomato. Wish they would speed up. Lots of green ones yet!

4 qys stewed tomatoes, 18 pints salsa,  5 pints juice. Should be the end of any major canning. Maybe more juice down the road.

I know, I have to enjoy my weeks. I'm working Sat, Sun, Mon, three 11s. It works for me.  :happy1: :happy1: Our tomatoes are just starting to get going good, probably will do some canning this week and maybe make some pepper sauce. Look up White Thunder BBQ pepper sauce on youtube. For some reason I can't post a link here. This recipe works great for me.

I think white thunder has a few different recipes. That's not the one I use but looks good as well.

fergot to take pictures, but picked up a dozen ears of corn at bob and judy's farmers market south of monicetello last nite. cooked it up cut it off da cob, bagged it up in qt zip log bags. tonite i'll throw it in the freezer. and man was that good tasty corn. man nuttin better then when its 20 below to have corn that tastes just like it came off da cob!!!!!!!!! :happy1: :happy1:
