My pickled nords taste great but I notice the meat is getting softer as time goes on.  I can't remember that happening but I haven't pickled them in years.  Does your nords get soft too Glenn?

I'm kinda scared I might have a nudder smite on the way.
As far as the pickled northern I've made it seemed to be best if we ate in in month or so.

my recipe doesn't call for salt water. It starts out with pickling SALT and vinegar mixed. It sits in that for 5 days. After that it's the brine, no water just vinegar. The fish gets rinsed good then I put it in ice water for about an hour. Before I put it in jars I try and squeeze as much moisture out of the fish as possible.

Done with the salsa for the year. 21 pints. Almost done with tomatoes. Have 28 quarts done. Few more quarts of juice to make and some spaghetti sauce and we can call it quits till the applesauce!

Finally got some Reaper peppers that are ready.....so I put some pickles on ice water. Will jar those up tomorrow....then be done for the year! Wooooo whoooo!

It's so when you put the hot brine in the jars with the pickles they don't cook in the jar as much and helps them stay crispy. I don't care much for soggy pickles.....you can buy additives to get the same results, but I choose not to add chemicals.

Yup, they are in the ice water sitting in the fridge.
Most of the time when I do pickles, I have a giant 7 day cooler I use because they all won't fit in the fridge.

Pickling pickles is winding down, these last few were made with Reapers & Ghost peppers for that "extra" bite.....

I have been doing this recipe for 10 years (since Grandma passed) it says you can eat them the next day, but better if you can wait a week.

They are "canned" being placed in a hot bath, and will last over a year..... jarred....

I keep them in a cool place, and give most away for Christmas presents.....

So, Rebs....the longer you can wait.... the better they get.....

Thanks! Never had the opportunity to do any canning. Closest I've come are the blanched, chilled snap peas I'm munchin' on right now... :tongue:
