My neighbor repaid my favor from the weekend we moved in when I gave him a plate of babybacks out of Apocalypse Sow. He makes a czech meat pastry called "Zinkrofa." although I'm fairly sure that's not how it's spelled as I thoroughly confuse Google when I type it in.  He makes a huge batch at Christmas and eats most of it then, but he freezes a few bags to eat throughout the year... I believe his Wife's late grandmother gave the recipe on to him before she passed.  Therefore he will not divulge ALL the details - which I completely respect.  But it contains roast beef, ham, polish sausage (or any similar cured sausage) ground coarse.  Then onions are mixed in and other "special spices" are added.  The mixture is then rolled in a homemade pie dough and deep fried.  Essentially it's leftovers in a fried pie crust, but whatever he puts in there is the bee's knees! This was like the worlds greatest hot pocket - definition of European comfort food.  Reinhard or anyone else with ties to "the old country" know of anything similar???  While I won't hound him for his family recipe, I'm not above attempting to imitate. ;D

This was the closest I could find..... Maybe?

For 3-4 servings

Ingredients for the dough

250 g flour

1 egg

1 tsp salt

Water

Ingredients for the filling:

350 g potatoes

ca. 1 tbsp quark (fresh curd cheese)

1 medium onion, chopped

100 g cubed smoked ham

Marjoram

Chives

Salt, pepper

Preparation:

Knead flour, egg and a little water to form a smooth dough. Use enough water to make dough soft and elastic, but not sticky. Let dough rest for 30 minutes.

For the filling, boil the potatoes and mash while still warm. Combine with the ham and onion and enough quark to form a smooth mixture. Add seasonings.

To make the potato balls, roll out a thin rectangle of dough about 2 mm thick. Form small portions of the filling into hazel-to-walnut size dumplings. Place them a few centimeters apart on the dough, leaving enough dough along the edge, which is then rolled over the balls. Use fingers to press the air out of the dough between the dumplings. Use a spoon or small rolling pin to seal the layers of dough together. Using a knife, cut out squares containing the filling, stand the squares seam side down, and using your fingers, make an indentation in the top of each. Ease the potato balls into boiling broth or salt water. When they float to the top, they're done. Serve as a side dish with meat or simply in the broth used to cook them.

Responding to the challenge, I looked through a whole bunch of czech and eastern european recipes.   

There are perogies, which is a noodle type dough with fillings that sometimes are fried.   

There are peroshkis which are like pirogies, and baked or fried.  More of a Russian thing, but they are all in the same area...

Runzas (Bierocks) are bread dough with fillings. 

There is also something called varenyky, same thing more or less.

Not much talk of deep frying though.   

And fillings seem to be most commonly burger or potatoes, cheese, onions.

Dear Internet Chef Delmar,

Being of direct Czech heritage, let me inform you there are many different Czech "dialects" in the  Slovak lands of great food. Even the meanings are different and are spelled different ways. The seemingly endless string of consonants strung together, with no vowels, and a seemingly unreal pronunciation, had led to many misinterpretations while being "Americanized" to fit our language. Take Kolaches for instance....that word is tossed around that they include all types of fillings, while Kolaches NEVER include anything other than a fruit filling. Drives me nuts when people start putting cheese and meat and them and call them Kolaches. Having lived with this most of my life, I can assure you it's doubtful the name is something a family "just made up", since we take great pride in our handed down traditions. It is possible some american/czech murdered a meaning through whatever intent, and it was used in that area, with available ingrediants, just like in the Czech areas of St. Paul, and believe it or not, in Texas. Yes, Texas...a huge area of Czech people in that area. No, I have no idea why they ended up there....The internet isn't going to be able to help you with that. That concludes todays lesson in Czech culture.   :azn:

Thanks for the info.  I just went to several recipe sites and looked at all sorts of czech and other eastern european recipes for things that looked like the description that was posted, or had a name that vaguely resembled it.     

Not much was deepfried.   So I speculated about the name, like I said.   Turns out that was incorrect although it seems to be Slovenian which is apparently different than Czech, since they promptly went back to being different countries as soon as they could. 

I gave it my best shot.

Czech language, meanings, and pronunciations will drive ya nuts. My last name is totally czech, and in my line of work ran across a lot of people from Czechoslovakia. They instantly knew I was Czech, and from what area (interestingly) but everyone of them  had a different meaning for my last name. My buddies just used to just call me "The bad Czech".... :rotflmao:


Now, back to the recipe...to be "more Czech", use shredded beef instead of ham, and some sausage...hope it gets made!!  :happy1:

In all seriousness, the post from greatoutdoors was intriguing.  My neighbor's wife is from Ely!  Next time I'm up in that area, I may have to stop by Zup's and do some asking around  ;).

Reb, I'm a half-Latvian living in a land czechs and I can tell you that you're spot on with pronunciations and dialects.  This entire town is the most grammatically incorrect place on earth. Trying to nail down a czech word or Czech phrase in one standard English definition is a lost cause.]

Looked up Klobasnek - similar but the Kolachky dough is thick - this thing I had was a thin pie-like crust

I was sort of wrong, depending on how you look at it.  They're Slovenian - so I suppose that's 20th century czech.

Way to go, TL!!!!  :happy1:  :applause:  Czechs have roots in Slovenia,  Slovenian also has roots in Croatia, too...that's where my Czech name derived from, the way it's spelled now!!Can't keep a good Czech down!!!  :rotflmao:

I figure that you really can't screw something like this up that much so I'll give it a try eventually.  Sounds like a good winter's day project...  I need to spend the end of summer and fall making bacon, smoking hocks and mixing up some more kielbasa to fill the freezer before the snow flies.
