No I DID stop on my way - AND THAT WAS THE TICKET!  REB FOR THE WIN!!!

Not only did they have maple pellets (and chips), they sell casings by weight and they're the ones they use in back so they should be good quality.  Just ordered enough for a little more than 5-lbs of sausage (just doing a small test batch for now).  I like that option rather than buying a big bag. I don't use them fast enough and haven't had luck saving them and preserving the quality.

I'm generally not a fan of Von Hanson's meats as I think they're a little too commercialized and mass-produced.  But the service was great and they had a bunch of different kinds of wood - as well as different forms (pellets, chips, chunks, etc)

  unlike you they will last a bit longer. I always do chunks or chips.  You believe everything you read del?

I believe  what I read when the guy that wrote it has done the experiment and has the data and experience to tell.   If you have a good scale, you can do the test yourself.   Weigh the wood, soak for an hour or two, let it dry for a short time and weigh again.

So you telling me that you believe soaking some hunks of wood for an hour or two is going to cause them to absorb significant water and produce more smoke and not just some extra steam?   That what you really think?

I have used green popal branches many times. Fresh branches work good. No bitter taste at all.

I agree with Del.  I put the wood in to get smoke.  So it has to be dry to smoke.  Getting it wet will make it last longer but it will not smoke longer.  It takes the extra time to dry out so then it can start to smoke.

No, quit reading into things! As in "can/can't" prove...I just suggested another experiment you can do! One hand or the other! Seems divided opinions on here....but soaking an hour or two? Better read the back of yer chip bag......mine says 30 minute soak. The Pitmaster BBQ Company.....personally, I've always piled handfuls of dry chips in foil and poked holes in it for my smoke. I don't have all these issues that are being brought up...my stuff smokes just fine.

for the record, i'm smoking some fish tonight........with charcoal............i am soaking my chips.........hickory to be exact and they'll soak for roughly 2 hours. and it aint ever failed me gettin some good smome!!!!!!!!!!!!!

The boards are really ranch casings, maybe 1/2 inch thick. I will weigh the tonight and again in the morning.   How's that?

continued in better thread....
Maple started out at 393 grams.   After 3 hours of soaking it is at 450 grams.   I find this surprising.   But it is back in the water, and we will see in the morning.   Then I will let dry for a day or so and see.  More results to come.

soak for a long time iffin ya want steam,For smoke sawdust or fine split wood at low temps works,

And for those still paying attention,   the weight was 502 grams at 7:30 am.   So they absorbed just over 100 grams or 25% of their weight in water.

Looks darn good Glenn.  I am paying attention Del.  Like I said I used to soak in water but I don't anymore.  The bigger the chunks the longer it smokes.

I'm paying attention to Del....

So was this kiln dried wood boards that you are "re-hydrating" for smoking?

If I cut a chunk off of one of my maple trees.... do you think it would have the same water content?

When I smoke something, I usually just go cut off a branch from one of my trees and use that.
