Now I'm hungry.... and I just had a big plate of beer-battered onion rings at restaurant here that is closing up tomorrow after 68 years....worked there when I was 14 for .80 an hour. Had to go in for the last  time...
Anywho, always ate my steak "pink'...as I got older, seems like it just tastes better "rarer"....

2 fore sure, but I would eat tgat whole stack!!

Not trying to change things up, but how do you guys check for doneness? I've always just pressed down a little with the tongs but lately I'll put the instant thermometer in, when it's early 130s it's coming off. I know I know poking holes is bad but it's still really juicy!

I do the "Thumb pad" test, depending on the meat...doesn't seem to work on a 2" thick chuckeye, for me, though....

http://www.simplyrecipes.com/recipes/the_finger_test_to_check_the_doneness_of_meat/

I will poke it with my instant temp gauge if needed...when it's near 140*, about one more minute then I pull it. Ya just seem to get to know when the steak is done, depending on the cut. The real  thick chuck-eyes always have me checking a lot more frequently, though. Here's one my butcher buddy cut for me.

Not trying to hijack the thread, but if you're ever down in the Farmington area and hungry for steak, try the Farmington Steak House on the main drag of their business district. Not a "date place" but a carnivor's delight.  Cheap steak dinners, with lots of meat.  This stuff ain't Manny's Silver Butterknife, but if you want good steak, lots of it, and low prices, give it a try some time.  It's cafeteria style, you walk down the line, order your steak, grab our salad out of a cooler, and proceed towards the register.  The steaks are all cooked to order right in front of you.  Nothing fancy at all, just good steak cheap.  I thing their sirloin is like $8.50.  You can get a big burger and fries for $3.50.  I've been told their gyros are really good too, but I just can't go to a steak house and order gyros.  That just ain't right.
