Here is my salsa recipe. I also put it on the recipe forum......my kids and grand kids love this....

Hotsy Totsy Salsa

4 cups tomato puree or diced tomatoes
1 cup diced onion
1 cup diced peppers
3 TBS white Vinegar
1 TBS minced garlic
2 tsp dried parsley
2 tsp Cumin
1 tsp Salt
1 tsp dried oregano

If you eat this raw it is fine the way it is. If you cook and can it then you need to start with more tomatoes and cook them down to the thickness you want. Then measure out the 4 cups after cooking.

I put in the measurements for the onions and peppers. But after measuring out the tomatoes, I just keep adding till it looks to be the right amount w/o measuring.

Not everyone in my family likes hot food. So I don't add it. They can add hot sauce before they eat it. Or you can add Jalapeno peppers to get it as hot as you want.

I can this in a pressure cooker to be safe.

This recipe can also be used for green tomatoes in the fall when you have to pick them all. Usually raw not canned.


So what do you mean about using more tomatoes to can it?  To boil off the water and end up with more actual tomato so it is not so runny?  SO 6 cups of tomatos?    Another question.  So you use green tomatoes and make this salsa out of them?   That sounds great.  Thanks Ken this sounds great.

Yes......Actually I use a tomato machine to run them through which removes the skins and seeds. It's called a Squeezo.....works slick when you have lots of tomatoes. I then boil the tomato sauce till it's the thickness I want. Measure out the 4 cups or more for larger batches. What ever is left I can as tomato sauce.

Yeah.....that's not the one I have. Just an example. The one I have is plastic except for the sieves the sauce goes through which are metal. I wouldn't pay over $200 for one.

Seems like a real timesaver but we like our canned tomatoes and salsa "chunky". Am I right on thinking this would be more of a pureed consistency?

Made the wife some raised garden boxes on the hill side. Hope it reduces the amount of weeds we’ll need to fight this year. I made them so we can wrap netting or chicken wire around them to keep the wild bunnies from nibbling.

When I use this recipe for fresh salsa it is chunky. Just chop everything up, add spices, put in the fridge to let flavors meld and eat it. If I can it, it is with tomato puree and chunky onions and peppers. I would think canning with chunky tomatoes would be fine.

I have also used this recipe for green tomato salsa. It's good also and makes a smaller batch to eat faster. My grand daughter likes making this one in the fall with green tomatoes. Again onions and peppers as much as you want.  Add hot sauce or Jalapeno's

2 lbs green tomatoes.....chopped
1 onion chopped
1 pepper chopped
3 tsp minced garlic
1 tsp salt
1/2 tsp cumin
1 Tbs olive oil
3 Tbs water
1 tsp sugar
1 TBS lemon or lime juice
1/3 cup chopped cilantro

That's what I thought. Usually have plenty of green ones to experiment with. Even being skeptical.....it turned put surprisingly good.

I planted radishes in our Earthbox on the deck on Sat.  They popped up today.  FUN!  Never planted them before.  Only 4th year gardening I think.  Getting better every year.

Man those green beans sure popped out of the ground the past 2 days. All my stuff is up except the radishes I planted Friday night. :happy1:

Sure did, used a hoe. Being the first year the grass just keeps popping up. Kinda bugs me tho,  some tops of the trees are blocking the sun so hope this all works out..

How much sun does it get during the day?!??  When it's 80-90 degrees for a week straight, it won't be a bad thing. Especially those vine plants.

I had some radishes out of the garden tonight...they were dang good!

Just had some meself. The scarlet globes were very sweet without a lot of firepower. The white globes were smaller & as sweet but they got your attention after a few seconds.  :happy1:

So our radishes were looking great.  Bigger every day.  Then 4 were chewed off.  The next day a couple more.  Wondered what it was.  Set up the trail cam and here it is a big mouse.  So I got out a trap and some peanut butter and I DK'd that radish robber.  Oh ya, I got him.  It's a great day.
