How about a thread about everyday meals you make or just sitting around the fire with a beer and roasting a hot dog. doesn't have to be fancy or it could be. Here is what I made yesterday. Korean style beef and pasta. Supposed to use steak for this and marinade it over night but I used ground beef. For pasta I used rice noodles. Getting to like those. Here are some pics. good luck.

That's Napa. Bok Choi has white celery like stalks.I use both kind of interchangeable in stir fry's.

I liked the looks of that too. We love cooked cabbage. Or even uncooked as in slaw. I want to make spud salad this weekend so probably won't have slaw. My grandma made great spud salad with lots of eggs and mayo, it was almost runny. But in a good way. That is my goal with ribs this weekend. I did mention that somewhere already on here, just forgot where. Can't wait for the weekend.

Finally have some time tonight. Raided the garden and found some asparagus to add to the pork chops and taters. Steps 1 and 2 complete see pictures. I'll post the rest of the steps has they happen.

Mmmmm...RH does China proud and The General follows up with an all American classic. Um, well, looks like part of it came from Canada but I digress!
While we're waiting for General's food to get done, seeing those rice noodles reminds me of when my brother and I were at the NAILE in Louisvile a few year's back. We took a farmer friend from Ohio who didn't get off the farm much to a Chinese restaurant. Meat and taters were more his cup of tea, no pun intended. Alvin was unsure about what to get and about the only things he recognized on the menu were chicken soup and French fries, so that's what he ordered. Roger and I shrugged and ordered some nasty Hunan dishes that would peel bark off a tree. When Alvin's soup came, it came with a little dish of dry rice noodles on the side. He looked at us with a dead serious look on his face and asked, "Are those the French fries?"

Thanks Dotch. I told the gal in your avatar she can't come over to my house any more. She snoars and couldn't cook in the morning. I hit the fire alarm and locked the door . I slid her a 5 and number for a cab under the door. She seemed a bit upset but it didn't bother me.

Good Morning. Back to yard work today. Tried for some panfish yesterday off shore but I did catch a few but not in the normal numbers in that spot. Only one guy out in his boat that I could see. Time to get the septic tank pumped again. City sends you a nice letter to remind you. $300 bucks for a dump pump. Well from dump to bacon then. Yesterday I put a couple of 5 pound boneless pork loins in Pop's brine for Canadian Bacon. Going to leave them in there for 9 more days. Then in the smoker it goes. Made some "Korean Hot Chicken" last night. Probably not the actual Korean name but that's what we call it. I have made this for many years and is a favorite of ours. My daughters make it all the time as well. Kind of a cool weather meal, winter meal, and they always give me a hard time when I make it in the summer. "Dad it's warm out, why the heat?" :campfire: To me I can make a steak for breakfast and bacon and eggs for supper at times. There are no rules. Anyway, we are having leftovers tonight. Made some fresh cucumber kimchi to have with it but when It came down t o eat, I forgot I made it. Senior moment but I will have some tonight. good luck

Bone-in pork country style ribs on the menu tonight. Made my own sauce and got them nice and tender like a butchers heart. On the side is Asian mushrooms and calliflower along with some fresh made cucumber kimchi. good luck.

I am glad for the last sentence Dotch. AND yes RH knows how to make a meal. I like the part about having a steak for breakfast and bacon and eggs for supper. There is nothing wrong with me now. :scratch: I did have steak for supper last night. I put it in my GMG DB for about 45 minutes with the smoke tube and the grill off. Then turned the grill on to 500 and put the steak back in for a nice cook. Turned out a great medium rare. I even have some leftovers for work today.
I just heard the weather forecast for the weekend. On Sat morning there may be some sleet coming down. Darn. It is getting colder again. I am hoping it warms up more than they think. I like to take the wife out for a couple of hours and try to get some walleyes. One year we had high water and lots of current. We used 1 oz. jigs and fished right near shore where there was less current. We caught a limit of 18" walleyes in a short time. Was a great fishing experience. My wife caught as many as me.

Good job Lindell, ya the weather doesn't sound real fun but we'll give it a go. Usually I do all my cold smoking on the big rig but thought I would use the weboar today. I sure hope the Mrs didn't have any plans for the remaining eggs. If anything they might give us a little elbow room Saturday.

Love the eggs Bobber and especially the black lab. Love Lab's. Lucy is a chocolate lab and I love her as much as I think you love yours. What is it with the openers anyway. There were some good one's but that weather seems to love the opener as well. good luck.

Last night I made another diet meal. This one has very low fat ingredients but yet was very good. Took some boneless chicken breasts and simmered them in some olive oil in my large wok. When almost done I added some medium salsa and green onions. Then after about 5 more minutes I added the cauliflower. When the cauliflower is tender then I added one bunch of cilantro chopped up, stirred it around a few times and it's ready to serve. I had some cucumber kimchi that I made, on the side. good luck

Smoked ribs with chipotle BBQ rub and sweet baby rays BBQ sauce, fresh cut seasoned fries and broiled romaine with olive oil, white balsamic vinegar, sea salt and Ramano sprinkled on top. The only thing I forgot was an ice cold beer :doah:

Coffee hows that white balsamic vinegar? I have 3 different dark balsamics one thick and 12 years old.I never tried white.I do know its made from white wine grape must,So is it a milder vinegar??
The meal looks great! Stir fry veggies w/chicken(Left overs)for us tonight!

I use the white balsamic more than the dark only because I've had stomach problems and the white vinegar doesn't give me killer acid reflux or heartburn. Yes It does have a milder taste but you still get a good balsamic flavor

Thanks. I got acid reflux also,I take perscribed drug for it.The only thing that bothers me now days is Hormel little sizzlers when we have breakfast evenings,I love em but it must be grease?? I'll have to get some white give er a try! sometimes dark is abit heavy on delicate greens

tonight I bit the bullet and tried one of those Mayo chicken recipe's. That's using Real Mayo. So I mixed around a cup [or a little more] of mayo and a around a half of a cup of parmesan cheese with it. Then I took chicken breast halves and threw them in the mix and mixed them up good. These breast were on the Dolly Pardon size so I had to cut them down a bit. then i had some shake and bake and I dipped them in the breading to cover everything. Put them in the oven at 350 until done. Made scalloped cheesy potoatoes on the side. Breasts were tender as a butchers heart and moist. good luck.

Fancy or not, that looks good. I used to use chop sticks for years myself. Used to be pretty good at it. but that said it;'s back to forks and spoons. Maybe it's just in my head but things tasted so good with chop sticks also. Could be the meals you made like yourself that are made for them. I have a good friend who is Chinese and is a Chef. That guy can eat with those things so good that you would thing he could eat soup with them LOL [of course that's not happening anytime soon]. Great meal. good luck.

Frying with coconut oil, it doesn't get as hot as others. So, getting the fish crispy is tough. Little bit lighter oil, but the smell of the oil...I would recommend cooking with it outside. Taste wise, it has a good flavor, but not that heavy deep fried taste.

That's an awesome looking meal coffee, between you and HD I wish I could bounce back and forth. I was going to brown roosters in coconut oil but went with peanut. I'm not throwing that idea out HD, next time I do fish in the cast iron coconut will he used...

Thanks bobber, the fish and scallops were done in the wok with a little olive oil and butter and the rice was also in the wok with some sesame oil, fish sauce and soy

That's some good stuff!!! We had a birthday party for my youngest grandchild Grace who turned 2. Bunch of folks came over for some simple cheese burgers. Cheddar or pepper jack cheese. Had a great time. good luck.

I suppose buy it at the grocery store??? Those scallops look great too. I bet you get good ones out there. We did some chick thighs and they were pretty good. Not picture perfect though. Not up to you guys caliber but tasted good.

I quite buying Hormel just for that reason!! No Matter what rub they always had that hammy cured flavor.Teals an Cashwise have different brand fresh ribs.Their sales always beat Cub by far.When the rib sale comes I buy for the year. Prairie Fresh brand whole slabs.

When I have to go to restaurant depot to get supplies for the shop I always get my seafood there, fresh from the strip district. I also picked up a bag of mussels to make with linguine and a pound of shrimp that were so big I only got 10 for the pound. Everything is packed in ice for the ride home

"enhanced" meats have been around for years. I use them all the time. Yes they have a salt solution in them and are found in a lot of products. There are some boneless chicken breasts that are enhanced as well or you could say "injected". Just rinse the ribs off with cold water. Lot of the solution is sucked out when they package it. You will see the liquid when you open the cryo packs they come in. I do like the non enhanced but when ribs are on sale it's game on, enhanced or not. Most of my pork butts are Hormell and I make sausage from them. I have used non-enhanced also when I can get a deal by the case and have not noticed any difference. I haven't changed any of my rubs weather using enhanced or non-enhanced. Just rinse the ribs off and your good to go in my opinion. good luck.

You can put on a rub, just don't put any salt in it. Some of the commercial stuff has a bunch of salt as well.

we had the RH Korean short ribs last night. My son told me they were his new favorite. I can't have that so I'm making walleye tonight and fried potatoes to get him off of RH's side of the ledger!!!

Way to spoil your kids Kris!! Cubs has thin cut short ribs for 5.99 lb. this week I don't think that they have ever had them on sale. Word must be getting around. How come you can't have any? But fresh walleye is awesome as well. good luck.

I ate a bunch of them and did pick them up at Cub. They are so good. I have lost about 12-15 pounds but short ribs will never be skipped in a diet.

Ya, I'm bringing some up already marinaded and frozen ready for the grill for our vacation up on the Ash River Trail. That , pulled pork and walleye will be our main meals. Lot's of fried potatoes also with those eye's. good luck.

Probably should of had some great gilled/smoked items on here but since I took my wife and our Lucy [chocolat lab] fishing time is short. So I made a pasta sauce yesterday enough to last two days. My homemade sausage, basil, tomato sauce, riccota cheese, cottage cheese and other stuff thrown in there. We caught plenty of pike and some small crappies but we are happy for the day together. So many folks running around in Jet ski's and other stuff it made fishing on this smaller lake not what it should have been. That's ok though. Folks have to enjoy themselves and this is a holiday so you would expect that. Hope everyone had a great day. good luck.

Good job Del. I like pecan pie but have never made one. I just learned the method to make cheesecake in a pie tin a couple of years ago. May have to expand my horizons.

Actually, if you buy the crust it is really easy. Even making a crust isn't that hard. Just takes a little experience.
The filling is
3 eggs, mixed.
1 cup sugar
1 cup karo syrup, light or dark. I use half of each or sometimes throw in a quarter cup or so of maple syrup instead of some of the karo.
2Tbsp Butter, melted.
1 T vanilla
Pinch salt.
1 1/2 to 2 cups of pecans.
Mix it all together, Put in pie shell and bake at 350 for 50+ minutes, maybe as much as 60. Top will sort of puff a little, or you can stick a instant read thermometer in and look for like 180 in the middle.

Just double checked. Recipe says 200 degrees in middle to be done.
And the Pillsbury crusts aren't bad.

Stole the recipe of the back of the Karo Syrup bottle. Buy the crusts and you could have one in the oven in 10 minutes....

Same recipe we use,The ole girl makes a killer pie crust so I refuse to buy any.Well unless she says buzz off. We got used to adding crushed pecans to the batter just cause we both prefer pecans over most nuts.And I have a source for pecans in Texas where they rake em in a pile like we do leaves and burn them!!!

You see Pecans in the shell at Christmas time. The rest of the time folks like me wouldn't buy them because we don't want the work of shelling them.
BTW I store mine in the freezer, since I have heard that they go bad rapidly, especially once opened.

Had a great day at my daughters yesterday planning our vacation up north on the Ash River trail. One of the items we will be having on the first day we get there will be something simple. My homemade Philadelphia Swiss Cheese Brats with some summer slaw. Simmered the brats in some onions and beer and then they hit the grill. good luck.

Made some bourbon chicken stir fry. Bock Choy [Chinese cabbabe], mushrooms, green onions, and some carrots were the veggies and served it over brown rice. I'm making ribs tonight. Have to make some polish sausage today. Had some fresh cucumber kimchi using that spiralizer on the side also. good luck.

Man this is fun and torture at the same time looking at this great food. I still haven't done the Kimchi thing and need to. Maybe a basic beginner cuke thing I should try. Thanks, it turned out delicious. but I'm not used to the texture of meat this way, its weired. it was fullu cooked, but had such a overley tender texture to it it felt weired. is this normal, something that just is and not used to?? I'm used to smoked sausage this entirely different. maybe chicken is this way, cause pork is seems fine.

About the only thing I use my gas grill for anymore is to cook bacon on the side burner on a cast iron pan. When I see these things like fish and asparagus and those tacos on the grill I want to cook them right away. Nice pics and great ideas.

Had some left over Hormel ribs,whole rack. I removed 1/2 for kraut an ribs when the weather cools,Had a few left overs so we decided to make a full rack of fresh un cured ribs to see the difference between the Hormel cured and Prairie fresh (Brand name) uncured.The difference was very noticeable! Try it some time if you have the chance to do a side by side.
Did the same rub of Emerals essence on both in a 225 degree grill for 3 hours, then when cooked swabbed with Ken Davis BBQ sauce on the meat side an left in a 200 degree grill for 1/2 hour to dehydrate sauce. No more Hormel's here!!
Done on a gas grill with apple chips for smoke for 20 minutes so as not to over power smoke

Who's crazy enough to think about making a half arse version of my German Gumbo in the summer. Me. Didn't add any of my homemade sausage, canadian bacon, or smoked ham hocks. But I did have bone-in pork country ribs, my German kraut with bacon, onions, and beef broth. So good. I did it in the crock pot so it was just fine as far as summer goes. Just had to have it. good luck.

I must of had them in there for about 6 hours. Put the country ribs on the bottom and then made the kraut with the bacon and put that on top. Then put beef broth near the top of the crock pot, added the garlic and black pepper and turned the crock pot on low and let her go. The country ribs fell apart but sure ate good. I got the whole recipe for the German gumbo on my site in the recipe page that adds the potatoes, ham hocks, polish and more than this time around. good lucck.

Man we are eating well today guys. lol I just ate 3 thick slices of my bacon and it is awesome. The last batch I did the dry rub and that was fun to do and tasted good. This is what I did in the Pop's Brine. This is the way I will do it from now on. Fantastic. All I did was a quick rinse when I took it out patted it dry and let it sit for an hour or two before I put it on the smoker. Just the right amount of sweet and salt to it. Perfect.

Yes it is Lota fennel,abit a anise,red pepper flakes.Thyme,Oregano.I think thats all.I hang it for a month or sometimes more.If you can time when spring is in the air and trees are in bloom they will add another flavor depth.We have basswood that smell oh so sweet and if I can hit the right timing thats my favorite time to hang it. In the pic on right is loin, Molasses cure. Middle is standard pancetta cured loin and left is the Butt Italian flavored cure

30 days seems best for me,As long as they are cured and oxygen cant enter the meat they are fine.If you try it put a pan under them they drip,Which is the idea to concentrate flavor.I do em spring and fall when its cooler,Spring being the best for me.
General I do em in a screened in porch, OR if hung in a open area spray with 50/50 mix vinagar water then rub course black pepper on em.Bugs wont touch the pepper

I'll be makin a pizza soon Menards had sundried maters on sale last week 10oz oil packed jar for 2.69 we got 6.Never seen sundried maters for less that 8 bucks for 4 oz!!! Course these are made for american tastes in sunflower oil rather than olive oil.It states on the jar made in Italy for the american market.I opened one and their really good!! They may be onsale yet if anyone wants to check em out?
