Soars sukulant summer sausage

so i was able to take a break in the action from work, got some bear, pork and beef ground up to make a 25lb batch. orderd up curley summer sausage kit, adde 4 tbsp of crushed red pepper. and some whole mustard seed. added alos 3 cups cheadar hi temps, mixed, let sit over night, and stuffed to day, boy I sure like the ease of stuffing summer instead of brauts. made up the 25 1 lb chubbys and threw them in the smoker for about 45 mn to dryout and then added the smoke, currently now getting internal temp to 160. at about 140 right now. cant wait. gonna then put them in the ice bath to stop the cooking process. uuuuummm looking good.

taste twst was real good.but id likr a littlr zing to it, but not heat. any sugestions. maybe little morte pepper idk?

 Sausage looks great!!!! Where can I find the one pound casings? How much do they cost? The 3", three plus pound casings I normally use are too much for just the two of us. Thanks.

I get the one pound casings and the larger size fibrous casings at Fleet Farm.  I think Boar got the kit from Curley's so it comes with the casings and the seasonings.  Boar,  you can just add more crushed red pepper, or add fresh jalapeno's in the mix like I did for the jalapeno summer I made.  Pepper jack cheese is a good idea in high temp cheese from HD. good luck.

thanks rieny that kinda what i thougt. the 1 lbers come with the kit. i think the 3 lbers ur getti g is ffor salami, this summer sausage. dont know why therts a diffffertencce i  casing nbetween thhe two. but u see it with store bought to.
