Because of my impending move, all my sausage equipment is packed away.  Smoker is still accessible, but we're trying not to make anything big or buy things that will fill the fridge - so I'm on hiatus.  Reading all the bacon and brat talk on here is making me jealous.  Will probably be end of summer before we're fully-unpacked an I'll have some more time.  Until then, I'll have to live through you guys.  I will be definitely firing up the 'sow soon after we move in to let the neighbors know were there!  Maybe do a few racks of ribs and hand-out some samples.

Only moving about 2 blocks :) - but we could not line up close dates the way we wanted so we're moving all stuff into a storage unit for a week this Saturday.  Will be fully into the new place on July 8th - and by then I'll be so desperate for a good home-cooked meal that it will not take me long to get something going.  But I got a bunch of pork belly and hocks from our last hog that I NEED to get to work on - but those projects will probably have to wait a month or two.
