POLISH WITH SOME HEAT
Just got done with 25 pounds of polish sausage.  Used Curleys seasonings.  Added extra garlic, powdered milk, mustard seeds, and crushed red pepper flakes.  Just 3 tbls of the red pepper which gave it some heat but just the right amount so it doesn't take away from the flavor.  Used all pork butts this time because I had a lot on hand.  Normally I add some beef to it.  Some of this is going up to deer camp along with some franks, summer sausage, and Canadian bacon.  good luck.

When do you hunt.  I'd just want to hang around the cabin all day and eat sausage.
