anyone got any ground meat jerky recipies they use??????? my granddaughters ex boyfriend gave me some ground up goose i believe. my wife curls her nose at the thought of using it in something so i thought this would be the route to go. its about a lb to 1 1/2 lbs. i do not currently have one of those jerky guns but if i like this i may purchase one. if i need to i can get some ground beef to extend the reciepe based on how much thise brine would cover. i would definelty seperate the meet.

i also have a package of cuke steak i wanna burn up also.

i did google it but with all the meat guys here i figured this would be a better avenue.

I've never done the burger jerky Glenn but have thought about doing it.  I know someone that does it now and then and they said it is easier just to spread it thin in a cookie sheet and then cut it in strips when done.  They don't use their Jerky gun anymore.  ????  Just food for thought.

Glen I have some stick and jerky recipe's on my site but in 5 or more pound batches.  Nesco and others have jerky seasonings that come in one pound batch packs.  Fleet Farm has them or go on line.  I would not use straight goose meat.  You could use the amount you have and use a equal amount of pork or beef.  Jerky guns are great for this.  You can use a stick attachment and the waffer attachment.  Don't use a cheap one.  Lem has a nice one for under 30 bucks and will last you a long time.  I like LPS idea also but I never used it.  spread it out thin between parchment paper and a dough roller and put it in the oven till done.  good luck.

Ground up goose needs some pork (up to 35 to 40 percent)
Otherwise it comes out dryer than a popcorn fart.

But like RH said, you can get a jerky seasoning from Fleet Farm for smaller batches.

Thanks guys. I have no idea if it's already mixed with anything do it could a crap shoot. Maybe I'll make something else out of it, but still thinking about the burger jerky.

Heck Glenn add it to 5 lbs of beef burger.  At least it will taste good and you can say it has goose in it.  The key to this Glenn is to have so much burger that you can't tell there is goose in it.  I know I used to love goose hunting but just got tired of eating them...   And that is where garlic, pepper, etc comes into the program.

Dad used to go to Canada goose hunting. He came home with coolers full. My wife had a great recipe for goose wild rice hot dish do he gave us a few. One year I gave some to a friend that smoked it. I gave some to dad, and I never seen any more goose. :pouty: :pouty: :rotflmao:

 :rotflmao: :rotflmao: :rotflmao: A farm we had permission to hunt on the owner said he would like a goose.  SO he got the first goose and we were proud to give him all he wanted.  I also gave him some walleye fillets that were nice and frozen.  After a couple of years he didn't want geese anymore but still liked the walleyes.  LOLOL

I just use a cheap jerky gun.  This fleetFarm product only gets one star, but for my small batches, it work fine.

I can't imagine trying to roll out the ground meat flat enough and then cut it into strips.

Even a cheap gun makes a big difference.

And I just use nesco or fleet farm brand mixes for the ground meat jerky.  I just shoot it onto racks and cook/dry it in the oven.  (I have a convection feature on my oven that also allows low heat settings.  I can't remember temperatures and cooking durations right now.  I mostly just set the oven as low as it will go and keep checking and take it out when it is done.)

I've tried making ground jerky a few times and it tasted good, but I just don't like the texture very much.  :thumbs:
Cooking over a open fire is all fun and games until someone losses a wiener!
