That's about how I remove the meat from the bone but I usually cut the chunks into smaller pieces before freezing. I get the part about having less meat exposed but this only works if you have a small deer.  If you did this with a big buck you would end up with a package that weights 10 pounds.   :rotflmao:

Doesn't everyone do it that way? I don't break them down quite that far. I want bigger top and bottom round like you see in the store.
