I like to sprinkle fillets with Emeril's Essence or Mrs Dash, bake in 350 oven for 15 to 20 min or until they flake apart.  Serve with melted butter and lemon. Doesn't get much better.

Also try grinding the pieces with the y bones and then use it in fish patties with onion celery bread crumbs and egg. :fishing:

Northern may not smoke too well because of low oil content, but worth a try

I only smoked a few, they seem to come out to dry.

But, I have stuck um in the food processor and made patties out of um.
Depends on if I'm to lazy to remove the Y bones.

Other wise I deep fry them with shore lunch, but, come on, EVERY thing taste's good deep fried! Well, almost........... :dancinred:

I'll have to try the baking thing, never thought of it.

yea i been told that they come out dry to but i also heard if you get cheese cloth and get it damp with brine it will hold some of the moisture in the fish and then lightly brush it with the brine while in the smoker helps to, at least thats what my grandpa told me the other day, anyway iam gunna give it a try thanks for the info!! :spam:
