Got the chili dogs stuffed today.  Ground everything yesterday and put the 25 pounds of mix in the fridge overnight for everything to meld.  Stuffed them today.  Used the oven today.  Have the grandkids and this is easier for me.  i used the same recipe that is on my site except adding the 2 1/2 pounds of high temp cheddar.  good luck.

Reinhard......aren't hotdogs supposed to be smoked. Or are chili dogs the exception?

Thanks everyone.  Ken,  smoking is the ideal method of course.  There are times when something come's up [like grandkids all of the sudden] and things change.  So I use the oven.  Great way to make sausage.  Can't get the love of the smoke, but you still will have a nice product.  Another way is to poach sausage.  I have friend that poach most of their links.  I also poach some sausage like Swedish sausage for example.  There is no one way of making sausage, or best way.  You have to be satisfied with what you make, and how you make it.  I never get tired of it, even though I have been making sausage for many, many years.  trying something new all the time.  It's an adventure that never quits.  good luck.
