Bought a 16 pound boneless NY strip whole in the bag that was on sale a couple of weeks ago.  Prepared it just like I would a prime rib.  Pulled her out at 130 degrees internal.  Turned out great.  Had mashed potatoes, rolls, a Tequilaberry's salad that my daughter made on the side.  After the NY roast was rested I made up some au jus and sliced the roast and put the slices in the au jus.  had pie for desert and a few adult beverages.  good luck.

I have wondered why a guy couldn't sous vide that hunk of meat right in the bag it is packed in, other than the fact that it is really big,  and no way to ad salt....

Throw that sucker in for 24 hours at 130, sear in the oven for a few minutes at 500+ (WFO)

bada bing bada boom.

Thanks everyone!!  Only had a dozen folks including grandkids.  Made sure everyone had some to take home.  I always make more than enough it seems.  But that's the way I like it.  good luck.
