the stuff i have cooking right now is
soy sauce
tomato sauce
brown sugar
garlic
salt pepper
and finally pepsi

well the jerky is done and it turned out wonderful is really sweet you can taste a hint of pepsi in every bite and the double added brown sugar doesnt hurt..Now I have a batch of venison im using the same marinade for, I also have a super spicy batch in the fridge waiting to go,Ill keep ya up to date on the new conncoctions i can figure out..

you can also put a little liquid smoke in
the marinade.

i woulsnt rry pork, to much risk getting
nastys in there! but you can smoke pork
for jerky if using a cure. but cant have
any fat. i would stick with beef or turkey.

Very interesting reading there BH. I have never done jerky in a smoker before. I have always used a dehydrater. I have also made jerky with ground meat. My kids love it that way.

i would think chicken would work, just havent
heard of any chicken jerky recipes! also i would
zap it in the microwave after the dehydrater
just to make sure the nastys are gone. when
i do jerky i use a cure so dont have to worry
to much. i do most of mine with like a top sirloin
or bottom round roast, season and cure then smoke
it. a dehydrater is around 135 degrees i smoke at
around 160. the hamburger jerky is pretty good
also, better for the kids, a whole lot cheaper!

ya i was thinking that, The dehydrator i have has a temp setting and i have been cooking my jerky at 160 degrees..ya the venison hamburger jerky has turned out the best so far..trial and error and the best part the errors still taste good...

the seasoning and cure kit i like to use is made
by hi mountain jerky cure, i use the hickory blend.
gander mtn used to sell it and rainbow too. comes
in 2 packets, one is seasoning the other cure.
well i be off to inver grove to texture some bedroom
walls...  one of those buddy favors! the pay and bennys
suck!

spicy batch of ground burger is smelling and looking good, Hopefully it will taste that good..lol..bonehead if you know anyone looking im getting rid of my smoker, its a pitmaster deluxe model about 4 years old in good condition.Smoking isnt for me was pretty much only used as a bbq.

So made my 8th batch of jerky yesterday. made the sweet recipe again but instead of pepsi used dr. pepper and it turned out great with incredible flavor... ::welcome::
