That chunk of meat that Leech posted reminded me of this guy boning out a steer in 13 minutes.  I didn't want to steal your thread Leech.     This is just amazing and would be a good guy to have around at deer camp.  That is if RH is too busy to show up....  lol

He did a great job.  Must of been a boner at some point.  I have boned out cow front quarters before for ground beef trim.  Years ago we never boned out anything much.  We cut our primals with the band saw.  Even the round steaks had the bone in it.  Now almost all the cuts are boneless with a few exceptions like the short loins, standing ribs, and bone in strips.  Shanks are bone in still and are cut into shank steaks for soup and soup bones.  I have never used a saw for deer.  All boneless and cut into various cuts for different uses just like beef.  The boners always had the sharpest knives in the world.  Back in the day it was piece work so the faster it was done, the more money was made.  Hard work.  Thanks for the video.  good luck.

Truly an awesome video and it show the value of a good sharp knife.  Took me about 5 hours to do my last deer all by myself -  but I have a LOT to learn.
