Boar,  I have a recipe on my site that I used for the skinless sticks but you can use any stick mix.  Don't show the dehydrator on the Homemade sausage page but I have done many on it.  On the site I did it in the oven on jerky racks so you can see how I did it in there.  Dehydrator or oven it will work.  good luck.
