I have done many pork loins and have never had the ham texture,  I think what we have here two different kinds (textures) meats and also the cure ingredients are not the same. 

that's why Canadian bacon is what it is cottage bacon again, then regular bellies a whole other story.. 

maybe to much over thinking here. 

everyone has been happy with what they made so far, right, so play some and try a little some thing different here there

Better get yer bacon now!!! Just talked to my butcher buddy this afternoon...he said pork bellies just skyrocketed, for some reason. Said the bacon they have at regular price now is less than what THEY will be PAYING for it!  He said he thinks it's gonna stay way up there, and no idea why it just rocketed up..... :doah:

America’s Bacon Reserve Hits An All Time Low; Price Could Skyrocket

Over the span of a year, from December 2015 to December 2016, America’s supply of frozen pork belly, which is used to make bacon, fell from 53.4 million pounds to 17.8 million pounds.  Even though pig farmers are producing more pigs than ever, according to Rich Deaton, the president of the Ohio Pork Council, the nation’s frozen pork belly supply is the lowest it’s ever been since 1957.

As such, consumers can most likely expect a large increase in price for their bacon.  With the depleting reserves comes an increase in demand, both inside and outside the United States.  The price of pork belly increased 20% the first three weeks of the new year, and it is widely expected an increase in the price of bacon will follow.

That and coffee....$#@!%  Neither one's been on sale for a long time. Folgers is $8.49 for 3 lbs most places...I bought 7 tubs of it last fall at $5.99...just using the last of it this week. Had to pay that $8 for it yesterday.   Bought 10 pkgs bacon for $2.99 on sale last Fall...now that's all gone. O well, my well-stocked freezer and dry goods got me thru the winter...now it's time to restock.  :angry:

I know this is the bacon thread but we are talking prices too.  I have read and heard on the radio that beef prices will continue to drop due to the large numbers of cattle being raised.  That is good news.  You would think pork would do the same.  ???

Hopefully it's just the bellies, and won't affect the CSR's or reg ribs.....I see baby backs are on sale here at $1.99 lb...

Seems to me that smokeheads like us have something to do with that.  Just in the last few years I noticed that smoker sales went up along with a variety of smoker grills and grills.  More and more smoking sites are popping up as well.  Pork bellies are very popular in Asian cooking here and get exported as well.  Supply and demand.  This has happend before.  Just a few years ago bacon prices went very high but that was because hogs were in low supply.  Now the hog supply is in good shape but the demand of some cuts like bellies are low.  Glad I have about 12 boneless pork loins in the freezer from the 99 cent sale.  good luck.

Ah, their thick-sliced smoked stuff...to die for!!!   :tongue:
 I broke down and bought some yday, a brand I've never tried, Sugardale hickory smoked. Fareway foods had it for $4.99... :doah:

Yummmmm! We used to always take a lb or 2 of Hormels Old Smokehouse up north with us. It was the same kind, thick sliced / extra smoke, a little spendy but well worth it. Don't think they even make it any more. :scratch:

Well, that Sugardale stuff sure wasn't nothin' special. Out of all the brands I've tried....wright's, hormel, corn king, farmland, oscar mayer, smithfield, etc, my hands down favorite is the Farmland thick sliced smoked, believe it or not.

If you need to buy it, whatever the Aldi brand is, it's very good - and cheap.  I still have three or four slabs of belly left in the freezer, I'll be good to go for the summer!
