Finally smoked the cottage bacon yesterday after a 10 day brine.  You use bonless pork loins for Canadian Bacon [1.49 lb now at Cubs], and boneless pork butt for Cottage bacon.  This is old fashion stuff.  i remember selling Cottage hams years ago smoked the same way, only sold whole.  i boned out two but's and cut t hem in half length wise and brined them.  Smoked them yesterday with cherry pellets using the Amazen tube smoker.  Didn't use my chip tray this time.  Smoke lasted for 6 hours.  turned out great.  good luck.

Those are the pieces of pork butt I took out of the smoker when they were cooled off.   After i shut off the smoker I just left the bacon in the smoker for the night instead of putting them in the fridge.  good luck.

Ahhhh sheesh.......*SLOBBER*  I had my physical yday, cholesterol went up a chunk. Still way below suggested normal levels, though. I told the Doc when he asked why, it was boober's and RH's fault. Totally.  :rotflmao:

Same thing as Buckboard Bacon, correct? or is there a difference in the brine, etc?

looked up buck board bacon, seems like it is very similar to cottage bacon, except the brine ingredients I think.  looks like some thing that would be very good!!

love too, but the new one had electrical issues so am waiting for new parts next day or two.  if this does not do it they can have the sucker back.  the sad part is the electrical part of the unit in a mother board, probe ans  couple other things.  so hopefully I have it figured out right, but when I called and they said they would the parts out with speedy I also said it was BS that I get a new unit and then I have to repair before I can use it!!!  so they are sending a cover for it, small pill what the heck!!

I agree, but I broke my own rule so I'll try to live with the best I can, if the new stuff doe't make it work it goes back.

I'm sure you will.  Too bad you had problems.  I had a problem once when I first bought a 30 inch Masterbuilt.  The brain box [digital settings] didn't work.  called them up and they sent me a new one right away.  good luck.
