Looks yummy!! I do have a question. When you guys brine them, what kind of container do you use to brine? I picked up a loin in Roseau Friday and plan to do this.

I use a 5 gal, bucket, and fill a zipplock bag full of water to keep the pieces submerged, definatley follow reiny instructstion to a T and it will come out perfect.

just 2cents buddy,  follow reinys instruction to a T, the only thing i vary isnthe the time in brine. he calls for 9-10 days i go 14, why well for one thing, i start it on a weekend and smoke it on a weekend, just works for me, but i feel i get anlittle more sweet flavor with more time. i also like the jack daniels chips from wallmar
, i use about 2-3 burns with those and it perfect for me, not over powing smokey flavor.

they'll work fine, I just prefer the jack daniles chips, if yu ever buy some open the bag and sniff, you see why.

 they are good to use, have not used them lately but a good chip!!
