Started this yesterday.  Don't have time to smoke on Sat. so today is the day.  9 pound brisket [the flat part].  Smeared the brisket with mustard yesterday [the glue] and then put on the rub.  Wrapped the brisket up in plastic wrap and foil and put it in the brisket in the fridge overnight.  9:30 am put the brisket on the rack in the smoker and put the thermometer in the thickest part.  Put a catch pan underneath to catch all the drippings.  I put beef broth and garlic chunks in the pan.  Set the smoker to 250.  Got my smokin tube filled with cherry pellets and lit her up.  She's smokin away.  good luck.

Went in the smoker at 9:30 and got the drip pan with beef broth and chunks of garlic under the meat to catch the drippings.  good luck.

If you drive down my street you will smell the smoke.  In warmer temps when the neighbors walk down the road pretending to excersize they always yell up to me "what are you smokin today".  I say come on up and have a beer and find out.  good luck.

Ya Andover, you know, by the nudist camp.....  Look for naked people and then roll the window down to smell RH's smoker.  I have yet to try a brisket....

Brisket is traditional for Passover.

Sorry for the late photo's but here is the brisket when I pulled it out of the smoker and the other picture is my dinner plate at my daughters.  Some ham, mashed tators, asparagus, brisket, and some brussle sprouts.  No, none left.  Everyone took home leftovers.   All was good.  good luck.

I was in Burnsville Costco this afternoon and they had briskets in Cryovac.   Might have been a special. 

3.xx   3.99 or 3.19, I forget per pound PRIME grade.  Looked like they must be whole, since they were big chunks of meat.   

Seemed like a pretty good price for prime....

I don't know about other costcos.

Thanks guy's.  Ya, Mike the sprouts are not for everyone and I understand.  These had bacon in the recipe and were good.  Del, I saw those briskets as well [the prime one's].  They are very heavy in the fat area and would go for choice myself.  But they would be great for sure but your paying a lot for the waste.  They are called packer briskets and I've done a few.  My last one took 18 hours.  It was 16 pounds.  The one I had was the flat of the brisket and I'll be sticking with those from now on.  Cost me 4.49 lb. I think  good luck.
