Today's project. 2017 canning has begun! 3 jars asparagus 3 jars winter onions. Looks good next to the 3 jars is asparagus already in the frig.

Glenn how long ya do the asparagus for? Pressure or just water bath? Add anything to it for spices?
Just curious? Always looking for more/different ways to put it away for winter!

not sure what you mean in regards to how long I do the asparagus for? I use this brine for frig cukes also. its very similar and close to the brine I use for canning pickles. the brine is rather simple:
2 qts, or 8 cups water
2 cups vinegar and 1/2 cup pickling salt............mix.

its not heated.  not hot bath. I add garlic and dill. it isn't sealed just set in frig for a good month!!!!!

I do freeze some for winter. just was off, I let it dry then in some type of plastic bag and throw in the freezer!

Your pickling not canning. I'm not a huge fan of the frozen. It turns to mush. I have canned some in the past, not bad but same thing gets a little mushy

I don't blanche my asparagus prior to freezing. seems to be OK.i prefer cooking them in foil on the grill!!!!!

no. I've seen it done that way. not a fan of flareups with the oil. with foil it seems to take the butter and garlic better with no forest fire.

Might have to try that Glenn. We always blanche it before freezing.
I always freeze my tamaters before canning....it's easier than boiling to peel the skins and ya don't get all the extra heat in the house. Seems like it is about 100 in the shade when we can the maters every year!

I got one of them camp chef 3 burner camp stoves, propane I set up in the garage. my canning is all done out there. easier on the glass top stove in the house. and yea keeps all that heat and humidity out of the house.

have a few beers, set up a fan and go for it!!!!!!! :happy1: :happy1:

We will do our canning in the shop when I get the 220 pulled to the outlet where the stove and dryer sit. Then cleanup will be a breeze. Hose it down and push it to the floor drain.
I'll have it all in one room! Shower,toilet, washer, dryer, stove, beer fridge, water heater, sink.
Can't wait!
