Don't take this as advice, but I'd think you'd be OK just letting it continue in the dry brine as long as it's sealed.  Might need a good soak in cold water before smoking, though.  Perhaps the wiser smokemasters can chime in here.

I think i"d lean towards freezing it for couple days,  but I'd sure like RH to chime in on this......

Thunder is right,  however the longer you keep the pork in the brine the more saltier it will get and the longer soak will be needed.  At the point you are now with only one week to wait you can do this.  If a wet brine you should take it out just rinse it and make sure you dry it good to the touch and then freeze.  If a dry brine  you will have some moisture also so just rinse and dry and freeze.  Take it out of the freezer on Thursday.  I've had stuff come up over the years where I had everything ground [sausage with cure] and in the fridge for the overnight stay and could not stuff it for a few days and I put it in the freezer and thawed it out and carried on as normal.  Turned out great.  good luck.
