I like the milder woods.  I use cherry and apple now.  I"ve used Hickory which is not too bad but will never use mesquite again [way too strong for me].  Use mostly pellets now since I have the smoking tube for smoked sausage and long smokes like brisket and butts.  For poultry I use the chip tray for it doesn't need much smoke.  good luck.

I use hickory most of the time.  Have done some apple and cherry and it is nice stuff too.

Glen I love burn't ends with briskets and butts.  Lot's of smoke, but Not so much on my chicken.  I'ts just a personal prefference   Most of the time I do chicken on the grill anyway because I have to have that crispy  skin which I can't get in the electric smoker.  I've done turkey's in the smoker as well with just a couple of trays of chips.  Then when almost done I finish it up in the oven to get that skin more crispy for a short time.    good luck.

My go-to is Hickory, but I will often mix it with Apple if I'm putting a lot of smoke on sausage.  I used Maple on my Venison Spicy Breakfast Rings I did and that worked great for that application. So good, in fact, that I'm using Maple as we speak on the bacon slabs I posted about earlier.  The cure had a lot of brown sugar and Maple syrup so it's going to be sweet bacon, for sure.

I'm partial to Cherry for beef roasts.

I do mostly apple and cherry in the tube, but have big chunks of hickory for hams and such but have been a fan of pecan for beef lately.  The neighbor's have a crab apple that I point out now and then tgat needs trimming so that always turns to smoke.
