so i been reading about making jerky out of pork loins. anyone do this????????

i would use a dehydrator. i will also get the backwoods seasoning from fleet farm or runnings. i prefer hickory fla

voring. with it being pork would a different seasoning be better. i am ok with teryiaki but not a huge fan of it.

Backwoods Jerky Seasoning come from the LEM company.  I can't say anything bad about them and I've probably used them in the past and liked it just fine.  Come on... its jerky: meat, salt, spice, yum.  Its all good.  Tough to screw up.

BUT, you asked about pork.  I've not done pork jerky, but they always say apple flavor goes good with pork.  If I was going to make pork jerky in a smomer, I'd use apple wood.  So to make it in the oven, maybe look for an apple flavor jerky seasoning package.

Trouble is, Backwoods Seasoning doesn't have apple flavor.

However, the generic Fleet Farm brand jerky seasoning is called "Back Forty" season mix.  I used Back Forty Original and Teriyaki on venison roast, and they were both great.  Back Forty doesn't have an apple flavor either, but they do have Sweet Hardwood.

This has been a long way to go for me to say maybe try Fleet Farm's Back Forty Sweet Hardwood flavor package.

Whatcha think of this...

The seasoning packages usually have you mix the spice with some water and then put it in a bag with the meat and refrigerate over night - or at least the Fleet Farm Back Forty Sweet Hardwood does.

What if you mixed the spice with cider instead of water before you put it all in the bag?

MY plan was to cut that fat cap off, kinda freeze it, run it threw my meat slicer, 1/4 inch thick then just add the seasoning overnite put on dehydrator. instead of cider what about apple juice.........i can get that free from my kids!!!!!

That would work. It's got a fair amount of sugar in it, if that matters. I use the pure apple juice concentrate mixed twice strength when I marinate my pigger roasts, but thats a long cook and some of yer flavor will cook out.
