Goes great with smashed taters and creamed corn....

Reb's Snappy Meatloaf

1 1/2 lbs 85/15 burger
1/4 green bell pepper, diced small
1/2 small yellow onion, diced small
1 Tbsp Worcestershire sauce
1 egg
handful (about 1/5 tube) Ritz crackers, crushed very fine
1/4 tsp seasoned salt
1/4 tsp ground black pepper
1/8 tsp chopped Basil
1/8 tsp garlic powder

    Topping

1/4 cup ketchup
1/4 cup chili sauce (or seafood cocktail sauce...same thing)
1/4 cup Heinz 57 sauce

Combine first nine ingredients, folding in carefully to distribute well. Don't "Over knead" the burger.
Shape into loaf, put in a meatloaf pan. (I use a loaf pan with removable flat pan with drain holes)
Bake in oven at 350* for about 35-40 minutes. Meanwhile, mix three sauces together until smooth.
Remove meat loaf, paper towel any grease off top of loaf and spread sauce evenly with back of a spoon.
Return meatloaf to oven for 20 mns. Pull and let stand for 5 mns before cutting and serving.

That all sounds great you guys.  I have never done homemade creamed corn or peas.  Both sound good.  I have been thinking of meatloaf Rebs.  I may have to try that.  Have some leftovers to clean up here first.

Birdseye used to have frozen creamed peas...not anymore. Also no more peas and pearl onions..... I love frozen peas, snap peas, sugar peas, peas porridge hot...
I just make my Injun corn with the creamed corn.

Since Glenn & Mikey were yawping about creamed peas, I knew I had a recipe somewhere...

            Creamed Peas

1/4 cup butter
1/4 cup all purpose flour
2 cups milk (I use whole, or half & half)
1/2 teaspoon salt
black pepper
4 cups frozen peas, thawed and drained

In a medium pot, melt butter. Whisk in flour until smooth.
Add milk and cook over medium heat, whisking often, until smooth and thickened. Stir in salt, pepper, and peas, cooking over medium heat until peas are heated through. Adjust seasonings to taste. A bit of onion powder is good, too.
