Hey RH, I've copied almost everything on your homemade sausage website,  dynamite stuff and we thank you. The last couple of times doing sticks the casingless turned out awesome with curly's formed bacon mix. I've been instructed to make more soon but I have only so much formed bacon seasoning.  I have plenty of Cody's snack stick seasoning and was wondering if you've tried that instead of the bacon on casingless sticks?

I have not tried the Cody's snack stiks without casings.  I don't see why not.  I have made snack sticks without casings before with good results.There will not be a change in flavor, just no casings.  good luck.

Thanks rh,  I think it's worth a shot. The casingless turn out good, and a lot faster to make. I ground up a chuck roast last time but see Wally world sells bulk ground chuck in 5 # tubes... perfect.

Ya Walmart does sell ground beef in 5 pound tubes but it's 75% ground beef and i would look for a sale of 85% ground beef for sticks not 75% [WAY TO FAT].  Cub usually has ground beef on sale in 3 pound tubes and then just get a second tube and just take two pounds of it and freeze the rest.  good luck.

Can you do any flavor such as Polish or Keilbasa or Summer Sausage in these casingless sausages?  Will they all stick together to make a nice stick?

80/20 is what I grabbed,  hopefully not too fatty. They sell both ground chuck and ground beef.. :scratch:

Bobber I would add about a cup of powdered milk to it and a cup and a half of water to help bind it so it retains most of the moisture.  LPS,  Sure you can use any seasoning for sticks in or out of casings.  I used the dehydrator for the skinless sticks.  Can use the oven or smoker with a wire mesh rack cover so they stay on the rack well.  good luck.

reiny,over the years of using ur PM meathod, ive noticed theirs a variety of PM. dose it matter? some brands are more granulated and somenlike actual powder. ever motice a difference ??

Good question Boar.  I've only used the powdered kind and never saw the granulated stuff.  Probably because I use the same brand every time.  I suppose it could screw up the measurements if one is course and one is fine.  Just like coarse Kosher salt vs table salt.  I would stick with what works for you.  I'm sticking with the powdered stuff since that is what I've been using for many years.  good luck.

ok, i guesse ive been using the carnation powderd milk, but it more granulated than a a actual powerd style brand, its like the consistancy of flour. guesse i havent notice a difference. but its been on my mind for awhile. thanky!

I bought a dried milk product and it was like crystals.  Didn't like it as much as the regular powdered milk.

Ended up following your recipe Rh with the exception of using Cody's and thought I would try the smoked and dried hot peppers I did a while back. Cooling down before the wipe down..  :happy1:  :bow:
