HERE IS ONE MY FAMILY REALLY ENJOYS

  4 CORNISH HENS
  1 BOX  STOVE TOP STUFFING
  SEASON SALT
   OLIVE OIL

THIS IS VERY EASY. TAKE THE BIRDS OUT OF THE FRIDGE AND WASH EM REAL GOOD. LET  THEM SIT AT ROOM TEMP FOR A HALF HOUR. IN THE MEAN TIME  MAKE THE BOXOF STOVE TOP .  STUFF THE BIRDS WITH STOVE TOP . BRUSH OLIVE OIL ON EACH BIRD , SPRINKLE SEASON SALT  ON EACH. YOU CAN EITHER SMOKE THESE  IN A 200 DEGRE E SMOKERFORTWO HOURS  OR COOK INDIRECTLY ON A CHARCOAL GRILL FOR AN HOUR .  MAKESURE YOU ADD ENOUGH CHIPS OF YOUR CHOICE TO GET A GOOD SMOKE GOING  .  TAKE OF THE GRILL  OR SMOKER , COVER WITH TIN FOIL  AND LET STAND FOR 1/2 AN HOUR . SERVE  AND ENJOY

That sounds pretty good.

I have a pretty good technique for game hens on the grill.  First, cut out the backbone so the bird is butterflied.  Season anyway you like.  turn your grill on HIGH and put two bricks covered in foil in there and let them get hot for about 20 minutes.  Then put the hens on skin side down and put the bricks on top.  Close the lid and turn the temp down to med-low.  Let them go for about 15 minutes, flip and give them another 5.

The butterfly and bricks make the birds cook a lot faster and therefor prevent them from drying out.  Plus the skin gets nice and crispy (the best part).

Holdem...  I put the cornish hens on the grill again today.  This time I made one for my wife, she loved it and said it was much better than when I put some in the slow cooker.  She said I could make one again some day!!  This would be good for when I go up to the shack....
