here is a recipe they use down in the carolinas,
heavy vinager based sauce. havent tried it yet
but might be a change from our sweeter sauce.

1 gal apple cider vengar
1/4 cup salt
1/4 cup garlic powder
1/4 cup black pepper
1/4 cup crushed red pepper
1/4 cup cayenne
1 cup Texas Pete Hot Sauce, I'm sure you can substitute whatever is in your area
you can adjust the heat with the amount of cayenne pepper
boil all ingredients "till it doesnt smell like vinegar", about 10-15 minutes.

  sounds like a keeper ! thanx bonehead .  . it is almost an exact  vinegar based sauce i have used in the past  only  we put yellow prepared mustard  in it  then  all the other ingredients. i used this as a  mop  becuse it is very thin . we used it on a whole hog  i smoked last year for our memorial day party. man  was it good .
