Seriously, BBQed raccoon is not bad. This is one of the few times you will ever see me mention the "P" word on the forum. Raccoons must be properly cleaned if they are going to taste good. The link below will lead you to instructions on how to do this.

You can parboil (there's that P word again) the carcass in a large stock pot using rub for the spice mix and can add any vegetables such as onions for even more flavoring. The sole purpose of parboiling is to render fat. Make sure you don't overcook the carcass and pour the liquid out of the pot first before removing the carcass from the pot. Otherwise if you take the carcass out without removing the liquid, the grease you are trying to remove will coat the carcass.

Place the carcass on a serving tray and into the smoker. A good cooking temperature is 250ºF. Whether you baste the raccoon is up to you. Cook the 'coon until the most of the meat is falling off the bone and remove from the cooker to cool. Once the meat is cool enough to handle debone the meat from the carcass and shred it like you would pulled pork. You can leave the meat in large chunks if you so desire.

Once the meat has been deboned and placed in a serving pan, you can add your favorite sauce to it or just add some canned chicken broth to keep it moist. Serve the meat as a sandwich. Good stuff!

Sounds like a lot of work to eat a coon. Think i'll stick to opossums and muskrat!!!  ;D

Tried Racoon once about 8 years ago at a PF banquet. Yuck.... Too greasy!  :puke:

Hmmmm, I'll have to pick one up next time they have the road kill special sign lit up on Hwy 19.  I guess you can make anything taste good though.  A buddy of mine took some Poo-Loo (Coot) and cooked them up and they were great!  Put nuff spice on it and I suppose a person can stomach just about anything.  Take care and N Joy the Hunt././Jimbo
