Got my summer sausage sausage done.  25 pounds of bacon spicy summer.  Used the Curley's formed bacon seasoning, added what I always do, mustard seeds, and some hot pepper flakes.  good luck.

Yes.  I use powdered milk in all smoked sausage.  Cuts down your shrinkage while retaining the moisture.  good luck.
